Soft Idli recipe

Idli (savory rice cake)is a traditional breakfast of south India. Made by steaming batter consisting of fermented black lentils and rice.

Served with coconut chutney and sambhar.

Ingredients

2 1/2 cups -parboiled rice/idli rice,
1/2 cup – thick poha(flattened rice),
1 tablespoon – methi seeds(fenugreek seeds),
1 cup – urad dal(husked black gram),
Approx 2 1/2 cups water
1 tablespoon- salt,
Oil/ghee

Description

Rinse rice ,poha and methi seeds ,soak in water for 6 to 8 hours.

In another container,rinse 2 to 3 times and soak (in 3 cups of water)urad dal for 6 to 8 hours.

Drain the soaked urad dal(reserve the water) and grind in wet grinder or mixer until smooth and fluffy (add water gradually around 1/4 cup of water at a time).

Take it out to bowl and keep aside.

Drain soaked rice mixture and grind in batches by gradually adding water ( recipe calls for 2 1/2 cups water total)until smooth batter.

Mix both urad dal and rice batter in a large bowl. Close the lid..Leave it to ferment for 6 to 8 hours or overnight.

Batter will rise to double its size.

Add salt and mix .

Grease the idli plates with oil or ghee.

Pour batter to idli moulds.

Add water to pressure cooker and steam Idli’s for 15 mins without whistle.

Serve with coconut chutney and sambhar.

Summer drink – sweet and salt Lemonades

Lemonade is refreshing and delicious to drink in summer days. Try this minty,salt and sweet lemonade and give your taste buds a real treat.

Add your favorite fruit like strawberries,blueberries,watermelon for extra special flavors.

Ingredients

4 to 5 – mint leaves,

2 – lime/lemons(juice),

1/2 teaspoon – chat masala powder,

1/2 teaspoon – salt or black salt,

5 to 6 tablespoons – sugar,

2 cups – water,

1 cup – soda/sparkling water

Ice cubes

Description

In a blender, add ice cubes ,mint leaves,sugar,chat masala powder, salt and squeeze 2 lemons juice .

Add 2 cups of water and 1 cup soda/sparkling water.

Blend everything.

Sprinkle some cardamom powder and serve chilled.

Pineapple fried rice

Pineapple fried rice is healthy,sweet and savory.I was doubtful to do at home until I got this easy recipe from my sister.Now I do it,whenever I crave for it.Magic ingredient is curry powder and rest is simple and easily available in your pantry. Do give it a try!!

Ingredients

1 small – chopped onion ,
1 cup – vegetables of your choice,
1/2 cup – cubed pineapple,
2 teaspoon – curry powder,
2 teaspoon – soya sauce,
1 teaspoon – vinegar,
2 teaspoon – chili sauce (adjust acc to your taste),
1 teaspoon – salt
1 cup – cooked rice,
Olive oil,
Coriander leaves
Cashews

Description

In a pan, at medium heat, heat olive oil
add chopped onions and sauté for 2 minutes.

Add vegetables and cook for about 7 to 8 minutes. add cubed pineapple.

Add curry powder,vinegar,soya sauce,chili sauce,salt(skip if added to rice) and sauté it for 2 minutes.

Mix everything to cooked rice and sprinkle some coriander leaves.

Ready to serve!!

Note – can add more Soya and chili sauce (if needed)after mixing prepared curry to rice .

Cucumber Avocado salad


I absolutely love this salad, I have made many more times and my family’s favorite.
It is combination of soft ,crunchy(add red onion for enhanced taste) and juicy.
Its summer and time for salad . Cucumber Avocado salad is one of the easiest salad.

Ingredients

1 large – English cucumber,
2 – Roma tomatoes,
2 small – Avocados,
1/4 cup – finely chopped cilantro,
1 – lemon (juice)
Salt,
Pepper,
2 teaspoons – Olive oil

Description

In a salad bowl, add sliced cucumber,chopped tomatoes,diced Avocados and finely chopped cilantro.
Give it a good mix.
add lemon juice, salt,pepper and olive oil .

Toss gently to mix everything.

Serve immediately.

Note

– Add salt and pepper before serving.
– can add sliced red onions for crunchy salad.

Masala chai/tea Icecream

who does not like Ice-cream?? everyone’s favorite and I love to have homemade ice-creams .No preservatives ,No extra Sugar. Tasty and Healthy.

Did i mention that i am a hard core fan of Tea/Masala Chai??Yes i love both Tea and Icecream. why not combine both and make it masala tea/chai Ice cream??

Here goes the simple recipe to do that..Try this homemade fusion ice-cream which needs very less ingredient and no ice-cream machine required.

Ingredients

1 cup/250ml – whipping cream
200 gms – condensed milk,
1 teaspoon – vanilla extract,

For Masala tea

1 cup – water,
2 teaspoons – tea powder,
2 to 3 – cloves, cardamom, Black pepper,

Description

In a thick bottomed pan,at medium low heat, pour water,cloves,cardamom ,black pepper and tea powder. Bring it to boil.
Boil till water reduces to half cup or less.
Strain and keep aside to cool down.

In a bowl, beat whipping cream until it is stiff.
add vanilla extract ,condensed milk and stir.

Add prepared masala chai liquid and give it a good stir.

Cover with cling wrap, foil and keep in freezer for 1 hour.

Take out from freezer and mix well with the help of spatula.

Again pop it back in freezer.

Take out from freezer and repeat the process.

Do this kind mixing every hour for first 3 hours .

and keep it in freezer for 6 hours or overnight untouched.

Masala chai Icecream is ready to serve!!

Medu Vada

Medu vada is an Indian fritter made with black lentils or urad dal.
Shaped as doughnuts and deep fried in oil.Which is Crispy outside and soft inside.
Very popular snack eaten as breakfast in south India.
Try this simple recipe. You can make yummy,crispy vada’s at home in just few mins and with less ingredients.

Ingredients

1 cup – Urad Dal/Black lentils,
2 to 3 spoons – rice flour,
1/4 cup – scraped coconut,
1/2 – small sized finely chopped onions,
2 – green chili finely chopped,
1/2 teaspoon- jeera/cumin seeds,
1/2 teaspoon – ground pepper
1 teaspoon – salt,
1 teaspoon – baking soda

Description

Soak urad dal for an hour or two.
Using mixer, grind it to smooth paste with very little or no water.
Add 2 to 3 tablespoons of rice flour and mix.
Batter should be thick like dough.

Now , add chopped onion, green chili, scraped coconut , cumin seeds, ground pepper,salt and baking soda.
Mix everything.

Heat oil in a pan.
round up the dough(lemon sized),make a hole in the middle and At medium heat,fry in oil until golden brown. Turn other side and fry too.

Take out to a napkin or tissue paper.

Repeat until the dough finishes.

Enjoy hot vada’s with coconut chutney.

Note

If dough is watery,add more rice flour or if it is too thick ,sprinkle ice cold water.

Avocado milkshake is a sweet, creamy and delicious summer drink made with milk ,sugar and cardamom powder.

Ingredients

2 – large Avocados,

1/4 cup – sugar,

1 teaspoon – fresh cardamom powder,

2 cups – cold milk

Description

Peel the avocado skin and remove the seed.

Take a blender,add avocado pieces , cardamom powder,sugar and 1 cup milk . Blend everything into a smooth paste.

Mix everything and add 1 more cup of milk.blend again.

Ready to serve!!

Notes

– adjust sugar and milk according to your desire.

– add 1 scoop vanilla Ice- cream for enhanced taste.

-can replace sugar with honey or condensed milk.

Pao de Queijo (Brazilian cheese bread)

Here goes the recipe of popular Brazilian food gluten free Brazilian cheese bread also called as Pao de Queijo. It’s crunchy outside and chewy inside. Made with tapioca flour(gluten-free) and cheese.I am bringing you eggless version of pao de Queijo . Try this simple recipe😄

Ingredients

1 1/2 cups – tapioca flour,

1 cup – mozeralla cheese

1 cup – sour cream or milk (gradually)

1 teaspoon – salt

Description

Preheat your oven at 350 Fahrenheit’s.

Line a parchment paper on a baking tray.

In a medium sized bowl,add tapioca flour, salt , cheese ,sour cream (or milk ) and mix well.

With the help of spoon or your fingers, scoop the lemon sized mixture and arrange on the lined tray.

Bake at 350F for 12 minutes .take out ,turn and cook other side for 12 more minutes.

Enjoy while it’s still hot with hot sauce !!

Note – can add 1 teaspoon Italian herbs for greater taste.

Chocolate covered strawberries

Chocolate covered strawberries is traditional gift for Valentine’s Day in USA.

It’s simple and perfect for dessert or anytime you crave for eating sweet.. chocolate + strawberries = perfect dessert.

Ingredients

6 to 8 – Strawberries with stems,

Candy melts (pink and white),

Or

Chopped semisweet chocolate

Toppings

Coconut,nuts,sprinkles

Description

Line parchment paper on a pan.

Take candies in a Microwaveable bowl, melt the candies in microwave for 30 sec, take out and stir.. again place in the microwave for 30 secs and repeat the process until candies melt completely and smooth.

Holding the strawberry stem ,dip the strawberry into the melted candies.

Lift and twist,immediately place on the lined pan to set. Repeat with all strawberries.

Sprinkle your favorite toppings or pipe some designs using melted chocolate.

Set for 20 to 30 minutes or 15 mins in freezer.

Delicious chocolate dipped strawberries are ready to enjoy!!

Vegetable puffs

Vegetable puffs is my favorite snack. I used to get this from a bakery close to our house. It’s spiced mixed vegetables stuffed in puff pastry and baked in oven until crispy , buttery and flaky.

Tried my own method of filling with my choice of vegetables.. try this if you are missing Indian bakery.. can be easily done in minutes.

Ingredients

Puff pastry (store bought,frozen),thawed to room temperature.

For filling

1/2 – finely chopped onion,

1/4 cup – chopped beans,

1/4 cup – carrot ,

1/4 cup – peas,

1/2 teaspoon- chili powder,

1/4 teaspoon- turmeric powder,

1/2 teaspoon- salt ,

1/4 teaspoon – Garam masala,

Oil

Optional

Potato,

Capsicum ,

Beets

Description

Thaw the puff pastry for 40 minutes to bring it to room temperature.

To prepare vegetable filling

In a pan,at medium heat,

Heat 1 tablespoon of oil, fry onion until done.

add beans,peas,carrot and cook .

Now ,add chili powder,turmeric powder,salt,garam masala and mix well.. cook for another 2 minutes.

Switch off the stove.

Preheat the oven at 400 F and line parchment paper on a baking pan.

Fill the prepared stuffing and close the pastry sheet.. seal all sides with help of fork.

Arrange on lined baking pan and bake it in oven for 18 to 20 minutes.

Enjoy hot vegetable puff with ketchup .
