Christmas fruit cake

Fruitcake is a cake made using dry fruits,chopped nuts,fruit peels,tutti fruti and spices.

Specially made on Christmas and weddings.

In Traditional method of Christmas fruit cake ,dry fruits is soaked in alcohol and rich in taste.

Here goes the easy method of doing fruit cake without alcohol. Tastes yummy with all the goodness of dry fruits and spices.

Ingredients

1 1/4 – All purpose flour,
1 teaspoon – baking powder,
1/2 teaspoon – baking soda,
1/8th teaspoon – cardamom powder,
1/8th teaspoon – cinnamon powder,
1/4 teaspoon – All spice powder,
1 tablespoon – corn flour
1 stick/113gms – unsalted Butter,at room temperature,
1 cup – brown sugar,
2 – eggs, at room temperature,
1 teaspoon – vanilla essence,

1/2 cup – hot water,
1 tablespoon – instant coffee powder,

1/4 cup / 2 tablespoons – milk / sour cream

1 cup – Dry fruits of your choice(raisins,cranberries,dry dates,tutti-fruti,dried fruit peels,almonds,pistachio,walnuts etc…)

Description

Preheat oven at At 350F, grease a 8 inch round pan with butter.

Take around 1 cup of dry fruits and chopped nuts of your choice and mix them in corn flour(which avoids dry fruits sink to the bottom).

Mix 1 tablespoon of coffee in hot water and keep aside.

In a medium sized bowl, using hand mixer beat softened butter until smooth,add brown sugar,beat 2 eggs (one at a time).

Add 1 teaspoon of vanilla and mix.

In a separate bowl,Mix all dry ingredients like flour,baking powder,spice powder,cardamom powder and cinnamon powder.

Now mix dry ingredients to wet ingredients and beat in hand mixer for 2 minutes.

Add prepared coffee mixture and dry fruits to it.

Finally , add milk or sour cream and mix everything until well incorporated.

Spread on the greased pan and bake for 35 to 40 minutes or until toothpick inserted to the middle of the cake comes out clean.

Allow it to completely cool and cut into pieces.

Frost with cream cheese frosting (optional).
