Carrot cupcakes 

Carrot cupcakes has carrots in its batter. Carrot softens the cake and as a result we have a soft and dense cake. Goes very well with walnuts and cream cheese frosting.Favorite of many. Try this easy recipe to make carrot cupcakes.


1 cup(128 gms) – all purpose flour,
1 cup(201 gms) – granulated sugar,
1 teaspoon – cinnamon,
1 teaspoon -baking Soda,
1/2 teaspoon -baking powder,
1 teaspoon – vanilla extract,
2 eggs( beaten) ,at room temperature,
3/4 cup(5.5 oz) – vegetable oil,
1/2 cup – walnuts,
1 cup – finely grated carrots (approx 2 carrots)

Cream cheese frosting 

1 /4 cup(57 grams) – Unsalted butter, at room temperature
113 grams/4 oz – Cream cheese
1 cup(225 grams) – powdered sugar,
1 teaspoon – vanilla extract

Preheat your oven at 350 Fahrenheit/175 Celsius and line 12 cupcake Pan with paper liners.
Beat 2 eggs.In a medium sized bowl,mix flour,sugar,baking powder, baking Soda,cinnamon powder.

add beaten eggs ,vegetable oil and vanilla. Now ,with hand mixer or electric mixer beat everything into a smooth batter.

Fold grated carrots and walnuts to the batter and mix to incorporate.

Using spoon or ice cream scoop fill 3/4 Th of cups with batter and bake for 20 to 25 min or until toothpick inserted to middle of the cake comes out clean.

allow to cool completely before frosting.

Cream cheese frosting

In a hand mixer or electric mixer,cream together butter , cream cheese. Add sugar ,vanilla and beat until fluffy and forms stiff peaks.

Using piping bag/Ziploc frost cupcakes .

Dates walnut chocolate cake(eggless)

If you are looking for sweet , moist eggless cake. Try this dates walnut chocolate cake(eggless).


1 cup – all purpose flour,
1/4 cup – cocoa powder,
1/4 teaspoon – nutmeg powder,(optional)
1 1/2 tablespoons – baking Soda,
1 tablespoon – baking powder ,
15 – medjool dates,(deseeded)
1/4 cup – walnuts,
1/2 cup – unsalted butter,at room temperature
14oz – condensed milk,
1/2 cup – warm water,

For garnishing 

Chocolate syrup,
Walnut/almond/cashew crushed pieces


Preheat your oven at 350 degree Fahrenheit’s.Grease a 8 inch round baking pan with butter.

Soak the medjool dates(deseeded) in 1/2 cup warm water for 10 minutes and then grind it with water to make smooth paste.

In a medium sized bowl,Mix all dry ingredients like flour, cocoa powder,baking powder, baking Soda ,nutmeg powder(optional).
add cubes of butter to it and mix well.

Now, add dates paste and condensed milk,stir and fold some walnuts.

Pour the prepared batter to greased pan and

bake for 40 to 45 min or until toothpick inserted to middle of the cake comes out clean.

Cool it and garnish with chocolate syrup and crushed walnuts.



Medjool Dates are super soft and sweet which keeps your cake moist. Any dates can be used but soaking time of dates depends on the type of dates you are using.

Pitted dates should be soaked for 25 to 30 min.

Dry dates should be soaked in hot water for an hour.

can use wheat flour instead of all purpose flour.

Chocolate chip cookies 

Cookie is a American sweet which is round, flat and crispy.Cookie is made up of flour, white and brown sugar, butter, egg, baking powder.

Chocolate chip cookie is a cookie which has a distinguish ingredient chocolate chip.


1 1/4 – all purpose flour,

1/2 – granulated sugar,

1/4 – brown sugar,

1 tsp – baking powder,

1/4 tsp – baking Soda,

1 cup – chocolate chips,

1/2 cup – unsalted butter,at room temperature

1 egg, at room temperature

1/2 tsp – vanilla,

2 tablespoons- water


Preheat your oven at 375 degree Fahrenheits.Place a parchment paper on baking tray.

In a medium sized bowl, using electric or hand mixer beat butter until smooth and fluffy, add granulated sugar and brown sugar ,beat well.add vanilla essence to it.

In a separate bowl, mix all dry ingredients flour, baking powder and baking soda.

Mix dry ingredients to butter mixture and beat slightly to incorporate, add chocolate chips and mix.

In a spoon or ice cream scoop drop cookie mixture to baking sheets and bake for 6 to 8 min or until it’s brown at the edges.

Cool completely and enjoy..

1/2 cup – unsweetened Cocoa powder,
1 tsp-baking powder,
1/2 tsp- baking soda,

Mini baking cups – 36 count


Preheat your oven at 350 degree Fahrenheits and line 12 mini cupcake Pan with paper liners.

In a medium sized bowl,with hand mixer or electric mixer cream together butter and sugar until fluffy, add egg one at a time and beat well,add vanilla ,vegetable oil,milk and mix well.
Add flour,cocoa powder,baking powder, baking Soda ,salt and mix everything into a smooth batter.

Using spoon or ice cream scoop fill evenly mini cups with batter and bake for 15 min to 18 min or until toothpick inserted to middle of the cake comes out clean.

allow to cool completely before serving.

Pumpkin Pie 

Pumpkin is a symbol of harvest time.Pumpkin pie is a sweet dessert pie with a spiced pumpkin based custard filling.

Usually made for Halloween, Thanksgiving and winter.

Try this easy recipe at home.


1/3 cup – melted butter,
1 cup – Graham crackers crumbs,
1 can/14oz – sweetened condensed milk,
15 oz – canned Pumpkin ,
1 teaspoon – pumpkin spice,
2 eggs


Pie crust – in a bowl, mix crumbs and butter.Spread on a 6 – inch round baking pan, even to the sides.

Bake at 350 degree Fahrenheits for 10 minutes.

Filling- combine pumpkin, condensed milk, eggs and pumpkin spice, mix well.
Pour the mixture to baked pie crust and bake at 350 degree Fahrenheits for 45 minutes or until the toothpick inserted to middle of the pie comes out clean.

Cool completely.Enjoy
& Refrigerate .


* can use store bought pie crust.

* top pumpkin pie with whipped cream.

*do not freeze it. Refrigerate

pineapple Upside Down Cake

Who does not like Pineapple?How about a pineapple upside down cake?Try this simple , juicy , moist cake at home.


1 cup – All purpose flour,
1 teaspoon- baking powder,
1/4 teaspoon-baking soda,
1/2 cup – sugar,
1/4 cup – brown sugar,
1 egg ,at room temparature
4 Tsp+ 2 Tsp butter ,at room temperature ,
3 Tablespoons-sour cream,
1 teaspoon -vanilla extract,
4 slices of fresh pineapple or canned pineapple,
Cherries (optional)


Preheat your oven at 350 degree Fahrenheits.Grease a 6 inch round baking pan with butter..

In a bowl, melt 2 Tsp of butter and mix Brown sugar. pour this mixture to pan and spread evenly, Now arrange pineapple pieces and cherries(optional) and keep it aside.
In a medium sized bowl,cream together butter and sugar, add egg,vanilla extract,sour cream, pineapple juice from the can and mix well.
Add flour,baking powder, baking Soda and mix everything into a smooth batter.

Pour to the baking pan(on top of pineapples) and bake for 30 min or until toothpick inserted to middle of the cake comes out clean.

Let it cool for 5 minutes and invert into a plate and allow to cool completely before serving.




* Baking time depends on your pan.. usually broader pan bakes in less time.
* If you are using fresh pineapple, instead of canned pineapple juice, add 5 Tablespoons of sour cream.

Coconut cookie bar

Cocunut cookie bar is so easy to do and will be ready in 20 min. You just need few ingredients to do this delicacy.
Enjoy with cup of cold milk!!

3/4 cup melted butter ,
2 cups Graham crackers crumbs,
1 can/14oz sweetened condensed milk,
1 cup coconut flakes,
3/4 cup chocolate chips,
1/4 cup walnuts

Also ,we need

13*9*2 inch baking pan

Spread melted butter in pan. Add crumbs to it and press firmly.

Now, pour condensed milk evenly.

Sprinkle cocunut flakes, chocolate chips and walnuts.

keep your oven ready.. Preheated to 350 Fahrenheit.
Bake for 20 to 22minutes ,Allow it to cool down and cut into pieces .

Refrigerate and Enjoy.

Note– if you don’t have store bought crumbs, crush around 16 graham cracker cookies into crumbs.
Coconut flakes can be sweetened or unsweetened.

Eggless Black Forest cake

Preheat the oven to 350 degree Fahrenheit.

1 1/2 cups – maida/all purpose flour,
1 teaspoon- baking powder,
1 teaspoon- baking soda,
1/2 cup- cocoa powder,
1 stick /113 gms-butter, at room temperature,
1 tin/14oz – condensed milk,
1 tsp-vanilla essence,
1 cup – soda(coca- cola/sparkling water)
Cherry syrup
1 cup -water,
3/4 cup- powdered sugar,
8 to 10 count- cherries,
For frosting
1 cup- whipping cream,
3 to 4 tablespoons – powdered sugar,
1/2 teaspoon- vanilla extract
Grated chocolate for garnishing.

First, Bake chocolate cake–>
Grease the 9*5 inch pan with butter.
Wet ingredients –>
In a bowl,mix butter,condensed milk, vanilla extract and beat well. Keep aside.
Dry ingredients –>
Sift together flour, baking powder, baking soda and cocoa powder.
Now, add dry ingredients to wet ingredients alternating with soda( sparkling water) till dry ingredients and soda are finished.
Pour the batter into greased baking pan.
Bake for 1 hour or until toothpick inserted in the middle comes out clean.
Let it completely cool.
Cherry syrup–>
Boil water, sugar, cherries until pulp of cherries is completely smashed. Let it cool.
For frosting–>
Beat cream, sugar, vanilla essence until cream becomes thick and forms soft peaks.
Cut the cake into 2 layers.
Pour the cherry syrup generously on both layers.
Spread the whipped cream on top of one layer and add some cherries.close the layer with another layer and cover the whole cake with whipped cream.
Decorate with some cherries and chocolate shavings.
* baking time depends on the pan you use. Broader pan bakes in lesser time like 35 to 40 minutes.
*refrigerate the whipped cream frosting till you use.

Honey cake

Honey cake is honey sweetened cake. Moist and juicy.. Soaked in honey syrup..yummiest cake to try😋

1 1/4 cup(325gms)-All purpose flour,
1 teaspoon- baking powder,
1/2 teaspoon-baking soda,
1 cup(250gms)- sugar,
3-eggs, at room temparature
1 stick/113gms-butter at room temperature ,
2 Tablespoons-sour cream,
1 teaspoon -vanilla extract

Honey syrup
1/2 cup(125gms)-honey,
1/2 cup(125ml)-Water
Jam syrup
2 Tablespoons – mixed fruit jam
1/2 cup(125ml)- water
Extra 5 Tablespoon jam and Cocunut flakes for decorating.
Preheat oven to 350 degrees F.

Grease the 8 inch pan evenly with butter .
In a bowl Sift the flour,baking powder, baking soda.
Now add sugar and mix well.
Add melted butter and beat 3 eggs, one at a time. add vanilla extract, add sour cream and beat the mixture for 3 to 4 minutes.
Pour the mixture into buttered pan and bake for 35 to 40 minutes or until the toothpick inserted into center of cake comes out clean.
Allow it to cool.
Take half cup of Honey and water in a small pot and warm it to syrup consistency.
Boil half cup of water and add 2 tablespoons of mixed fruit jam and stir it to syrup.
Take a tray with sides, pour honey syrup (warm)and place the cooled cake and poke the cake with fork. Now, pour jam syrup (warm)all over the cake.
Heat a pan , put 5 tablespoons of jam and melt it .

Spread the jam on the cake and sprinkle cocunut flakes.
Delicious Honey cake is ready. Enjoy!!

Oreo chocolate cheesecake

Cheesecake is a sweet dessert consisting of one or more layers.Bottom layer will be often made of crushed cookies,middle and thickest layer with cream cheese,eggs and sugar.Top layer can be topped with fruit,whipped cream,nuts chocolate syrup etc..

preheat your oven at 350 Fahrenheit and keep ready.


Oreo cookies(chocolate)-10 count,
2 Tsp-butter(melted),
8 ounces cream cheese,at room temperature,
1/2 cup-granulated sugar,
2 Tsp-sour cream,
1 tsp-vanilla extract,
1/2-lemon(extract juice),
2-eggs at room temperature,
chocolate syrup to garnish


Smash the oreo biscuits into powder by putting it in ziplock or crush it in blender,add melted butter and mix well.
place the baking cups in a muffin tin.put the mixture into cups and press to firm.keep the muffin tin in freezer for about 15 minutes.
In a bowl,add cream cheese and stir good,add sugar and mix ,then add 2 eggs one at a time and mix well. add sour cream,vanilla extract,lemon juice stir good.
with the help of icecream scoop fill(equal amount) the chilled baking cups.
bake for 20 to 22 min or centers are firm.
remove and allow it to cool for 20 minutes.garnish with chocolate syrup.
refrigrate for 4 hours or overnight.


Note:its normal for cheesecake to sink little in the middle.
