Zucchini fritters are very easy appetizer or side dish ,which is crisp in the edges and soft in the center. Very healthy and easy way to include some veggies to your diet. Kids favorite and great snack for evening . It is so filling and can have a as a breakfast,lunch or dinner too.
1 cup – All purpose flour,
1 teaspoon – baking powder/soda,
3 – zucchini,
1/2 cup – chopped onion,
1/2 cup – shredded carrot,
1 teaspoon – chili powder,
1 teaspoon – salt,
1 teaspoon – cumin powder,
Wash 3 zucchini ,trim the edge and grate .
Mix salt and keep aside for 15 minutes.
Now squeeze out the water from grated zucchini or wrap in cheesecloth and squeeze to drain all the moisture .
Add grated carrots and finely chopped onions to it. Mix
Mix baking powder,chili powder,cumin powder to All purpose flour.
Add flour mixture to zucchini and make a soft dough.
Heat a skillet at medium heat, add oil .
scoop lemon sized mixture( slightly flatten)onto hot skillet and cook for 2 to 3 minutes each side.
Enjoy with ketchup or sour cream.
