Masala vada is a South Indian snack made of Chana dal / Bengal gram. Bengal gram is soaked and with some spices ground to smooth paste. Fried in oil till golden brown.
Best tea time snack.
Ingredients
1 cup- Chana dal/ split Bengal gram,
1 small onion,
6 to 8 – green chilies,
1 or 2 – garlic cloves,
Small piece of ginger,
1 teaspoon – cumin/ jeera seeds,
3 tablespoons – dry coconut,
1/4 cup cilantro,
mint leaves,
1 and 1/2 teaspoons- salt,
Water, oil to fry
Description
Wash and Soak Chana dal in water for 2 to 3 hours. Drain Chana dal.
Grind soaked Chana dal(no water),1/2 onion, green chilies,ginger, garlic, cumin,dry coconut,cilantro, mint and salt.
Add 2 tablespoons of water(if required while grinding).
Add 1/2 finely chopped onion to the mixture and mix well.
Make lemon sized balls of vada mixture(about 20 balls) and press them to flatten.
Heat oil in deep- fry pan on high heat for about 5 minutes. Check oil by putting tiny size of mixture to oil , it should puff up .
Reduce heat to medium low. Fry 4 to 5 vada’s on both sides till golden brown .
Fry remaining vada’s . Serve hot with chutney.

Note-
* try to grind dry without water. If your mixer needs water, add 2 Tablespoons of water. No need of fine paste.
* Be patient, vada’s takes time to cook.
* easy if you flatten the vada’s on palm and put them directly into oil.
