Rasmalai (Indian sweet)

Rasmalai is a sweet from bengal,India.
Ras means juice ,malai means cream.
Yes this sweet is made up of whole milk . Prepared paneer/ cottage cheese is soaked in condensed,flavored and thickened milk.
I prefer authentic method so no short cut.
It is very easy as is. Key is patience.

Ingredients

Paneer /cottage cheese

3 cups – whole milk,
2 tablespoons – lemon juice ,

Rabri/thickened sweet milk

2 cups – whole milk,
14oz – condensed milk,
2 to 3 tablespoons – Badam,pistachio and cardamom powder,
Kesar(optional),

Sugar syrup

2 cups – water,
1 cup – sugar

Description

Step 1

Prepare paneer /cottage cheese

In a heavy bottomed pan, at medium heat,

Bring milk to boil.switch off the stove and add lemon juice (1 teaspoon at a time) and stir..

Slowly milk curdles and leaves water.

Pour it to muslin cloth/cheese cloth .rinse slightly in water to remove the lemon essence from the paneer/cottage cheese.

Squeeze out water .tie the Muslin cloth and hang for 35 to 45 minutes .

Step 2

Rabri/thickened sweet milk

In a heavy bottomed pan, pour milk and switch on the stove.. bring it to boil by stirring occasionally. Add condensed milk and cardamom,pistachio,almond powder.

Cook until milk mixture thickens and reduces to half by stirring occasionally and not boiling.

Switch off the stove and keep aside.

Step 3

Take paneer/cottage cheese from muslin cloth into a plate . Stretch and knead for 8 to 10 minutes until you get a smooth dough.

Do equal size of balls and slightly flatten it.

Step 4

Sugar syrup

At medium high heat, bring water and sugar to boil.

Now ,add paneer/cottage cheese one by one .

close the lid and cook for 8 to 10 minutes.do not stir or lower the heat/temperature.

Take out in a plate and let it cool.

Step 5

Gently squeeze(to take the sugar syrup out) the soaked paneer/cottage cheese and drop in Rabri(step 2).

Soak it for 4 hours or overnight.

Top it with almonds, pistachio and serve chilled.

Notes

⁃ Can use saffron/kesar for greater taste.

Just drop 3 to 5 strands of saffron to 1/4 cup of warm milk and add to Rabri.

⁃ make sure no pulp in lemon juice.
