7 cup Burfi 


7 cup Burfi is a Indian sweet. Very easy one to make. As name indicates we are using 7 cups of equal measures to make this delicacy.If you are looking for quick and easy sweet. Try making seven cup Burfi.

Ingredients

1 cup – Besan /chickpea flour,
1 cup – milk,
1 cup – coconut,
1 cup – melted ghee/clarified butter,
3 cups – sugar,
2 Tbs – badam/almond powder,
Pinch of Cardamom


Description

Grease the tray and keep it aside.
Dry roast the Besan in medium low heat until the raw smell of Besan goes away..
In a thick bottomed pan,add ghee,Besan, sugar , milk, cocunut and keep on stirring, make sure no lumps.

After 18 to 20 minutes of continuous stirring, mixture starts leaving the pan and becomes thick collecting to one side.

Now pour to a greased tray and let it cool little and run knife to make desired shape.

When it completely cools cut into pieces.

7 cup burfi is ready. Enjoy!!

Notes

* With non- stick pan, it takes less time like 15 minutes.
* Sugar can be reduced to 2 1/2 cups.
* Can use fresh or dry coconut .

Ghee(clarified butter)


Ghee made by simmering butter, is widely used in Indian cuisine. Roti’s , Rice and many Indian sweets.
Try making ghee at your own, you will love the taste. Healthy and tasty than store bought ghee.

Description

Take few sticks of unsalted butter (try organic 0r butter made of cow’s milk for better taste) ,make pieces and put it on a thick bottomed small/medium sized pan.

At low – medium heat (at number 4) bring it to boil,foam forms and after 10 minutes you will notice bubbles and also hears bubble sound. Stir occasionally.

In another 10 minutes, you will see milk solids sinking to bottom and upper layer which is butter starts becoming transparent.

When the bubble sound stops ,butter turns gold color and milk solids at bottom turns brown, take it off the heat and strain using muslin cloth.


Discard the milk solids collected on Muslim cloth.

Let your ghee sit overnight at room temperature for a creamy yellow texture.

Enjoy your homemade ghee!!

Notes

* For better taste,when ghee is almost done, you can add spices like 1/4 spoon turmeric few curry leaves or betel leaves(which you are going to strain at end).

* After keeping for one day If you don’t get grainy texture of ghee then you have removed early from stove. Boil it at medium low for 5 more minutes.

* Easy trick to know when it is done is when the sound which it was making stops.

* Total time taken is 20 to 25 minutes depending on your pan.

Pumpkin Pie 


Pumpkin is a symbol of harvest time.Pumpkin pie is a sweet dessert pie with a spiced pumpkin based custard filling.

Usually made for Halloween, Thanksgiving and winter.

Try this easy recipe at home.

Ingredients

1/3 cup – melted butter,
1 cup – Graham crackers crumbs,
1 can/14oz – sweetened condensed milk,
15 oz – canned Pumpkin ,
1 teaspoon – pumpkin spice,
2 eggs


Description

Pie crust – in a bowl, mix crumbs and butter.Spread on a 6 – inch round baking pan, even to the sides.

Bake at 350 degree Fahrenheits for 10 minutes.

Filling- combine pumpkin, condensed milk, eggs and pumpkin spice, mix well.
Pour the mixture to baked pie crust and bake at 350 degree Fahrenheits for 45 minutes or until the toothpick inserted to middle of the pie comes out clean.

Cool completely.Enjoy
& Refrigerate .

Note

* can use store bought pie crust.

* top pumpkin pie with whipped cream.

*do not freeze it. Refrigerate

Rava coconut ladoo


A easy and quick treat made with very less ingredients and requires less cooking. Blend of tasty ingredients like rava, coconut, sugar , ghee , cardamom and nuts.

Ingredients
1 cup – Rava/ Semolina ,
1 cup – Sugar,
1 cup – desiccated coconut powder,
1/4 cup – nuts and raisins,
1 Tsp –  cardamom powder,
1/4 cup – hot milk,
2 Tbs – ghee


Description

Roast rava for 5 minutes or until you start to smell nice and little crunchy. Set aside to cool.
In a small pan, heat ghee and fry cashews till golden brown , add raisins and switch of the stove.
In a medium sized bowl, put roasted rava, sugar, Coconut powder, cardamom powder, fried nuts and raisins .stir well.

Add hot milk spoon by spoon binding the mixture. take a little portion of the mixture make balls. Add milk as needed .

Mixture makes about 15 ladoo ‘s. Enjoy!!
Note

* milk should be hot. Use spoon to add milk do not pour the milk into mixture Or at once.
* Refrigerate the remaining ladoo’ s . Can get spoiled outside as we have added milk.

* For longer life of ladoo’ s you can skip milk and use hot ghee(around 1/4 cup) for binding.

* If you have added more milk or ghee, don’t worry add more rava, sugar and coconut .

pineapple Upside Down Cake


Who does not like Pineapple?How about a pineapple upside down cake?Try this simple , juicy , moist cake at home.

Ingredients

1 cup – All purpose flour,
1 teaspoon- baking powder,
1/4 teaspoon-baking soda,
1/2 cup – sugar,
1/4 cup – brown sugar,
1 egg ,at room temparature
4 Tbsp + 2 Tbsp butter ,at room temperature ,
3 Tablespoons-sour cream,
1 teaspoon -vanilla extract,
4 slices of fresh pineapple or canned pineapple,

2 tablespoons – pineapple juice from can or fresh juice mixed with teaspoon of sugar
Cherries (optional)


Description

Preheat your oven at 350 degree Fahrenheits.Grease a 8 inch round baking pan with butter..

In a bowl, melt 2 Tbsp of butter and mix Brown sugar. pour this mixture to pan and spread evenly, Now arrange pineapple pieces and cherries(optional) and keep it aside.
In a medium sized bowl,cream together butter and sugar, add egg,vanilla extract,sour cream, pineapple juice from the can and mix well.
Add flour,baking powder, baking Soda and mix everything into a smooth batter.

Pour to the baking pan(on top of pineapples) and bake for 30 min or until toothpick inserted to middle of the cake comes out clean.

Let it cool for 5 minutes and invert into a plate and allow to cool completely before serving.

Enjoy!!

* Baking time depends on your pan.. usually broader pan bakes in less time.
* If you are using fresh pineapple, to substitute canned pineapple juice, add Tablespoon extra sour cream or juice extracted from fresh pineapple.

peda


Peda is a Indian sweet. I have made it using just 4 ingredients- butter, ricotta cheese, milk powder and condensed milk.Easy and Tasty😋

Ingredients
4 Tablespoons/1/4 cup – Unsalted Butter,
425 grams – Ricotta cheese,
14oz – condensed milk,
1 1/2 cups – milk powder


Description

Take a non stick pan at medium heat and melt butter. Add Ricotta cheese and stir for 3 to 4 minutes.
Now, add condensed milk and mix well..

Keep stirring. add milk powder in 2 batches and stir continuously until it becomes thick batter.( approximately 10 to 12 minutes)make sure no lumps.
Once it becomes thick and leaves the sides of pan switch of the flame and allow it cool..
When it’s slightly warm(don’t let it completely cool)make lemon sized balls.
Enjoy delicious Peda😋
Note

* decorate peda’s with almonds, pistachio, cashews etc of your choice .

* Can use cardamom powder .

* Apply ghee to your hands if peda mixture is   Sticky or hard.

Masala vada/ Dal vada

 

Masala vada is a South Indian snack made of Chana dal / Bengal gram. Bengal gram is soaked and with some spices ground to smooth paste. Fried in oil till golden brown.
Best tea time snack.

Ingredients

1 cup- Chana dal/ split Bengal gram,
1 small onion,
6 to 8 – green chilies,
1 or 2 – garlic cloves,
Small piece of ginger,
1 teaspoon – cumin/ jeera seeds,
3 tablespoons – dry coconut,
1/4 cup cilantro,
mint leaves,
1 and 1/2 teaspoons- salt,
Water, oil to fry


Description
Wash and Soak Chana dal in water for 2 to 3 hours. Drain Chana dal.
Grind soaked Chana dal(no water),1/2 onion, green chilies,ginger, garlic, cumin,dry coconut,cilantro, mint and salt.

Add 2 tablespoons of water(if required while grinding).
Add 1/2 finely chopped onion to the mixture and mix well.

Make lemon sized balls of vada mixture(about 20 balls) and press them to flatten.

Heat oil in deep- fry pan on high heat for about 5 minutes. Check oil by putting tiny size of mixture to oil , it should puff up .
Reduce heat to medium low. Fry 4 to 5 vada’s on both sides till golden brown .

Fry remaining vada’s . Serve hot with chutney.

Note-

* try to grind dry without water. If your mixer needs water, add 2 Tablespoons of water. No need of fine paste.
* Be patient, vada’s takes time to cook.
* easy if you flatten the vada’s on palm and put them directly into oil.

Bread paneer roll


Best snack for kids. It’s healthy and filling.
With very less ingredients you can make this yummy evening snack.

Ingredients
6 to 8 slices of brown/ white bread,
1 cup – grated paneer( Indian cheese),
1 teaspoon- salt,
1/2 teaspoon – Chat masala,
1/4 teaspoon- ginger powder,
2 tablespoons – butter
1 tablespoon – water


Description
In a medium sized bowl grate the paneer , add salt, chat masala and ginger powder. Mix well.

Add water and mix .

Cut the edges of bread and by rolling flatten it.Fill the mixture and roll the breads.

Put some oil/ water/ butter to the edge of bread roll to glue it . Butter the bread rolls with the help of brush.

Heat the skillet in medium low heat.put some oil and cook the bread rolls all side by flipping.

Paneer bread roll is ready😋
Enjoy with tomato ketchup !!

Note
– use white or brown bread.
– Add chilly powder for spicy rolls.
– bake the rolls at 350 degree Fahrenheit each side for 10 minutes.

Coconut cookie bar


Cocunut cookie bar is so easy to do and will be ready in 20 min. You just need few ingredients to do this delicacy.
Enjoy with cup of cold milk!!

Ingredients
3/4 cup melted butter ,
2 cups Graham crackers crumbs,
1 can/14oz sweetened condensed milk,
1 cup coconut flakes,
3/4 cup chocolate chips,
1/4 cup walnuts

Also ,we need

13*9*2 inch baking pan


Description
Spread melted butter in pan. Add crumbs to it and press firmly.

Now, pour condensed milk evenly.

Sprinkle cocunut flakes, chocolate chips and walnuts.

keep your oven ready.. Preheated to 350 Fahrenheit.
Bake for 20 to 22minutes ,Allow it to cool down and cut into pieces .

Refrigerate and Enjoy.

Note– if you don’t have store bought crumbs, crush around 16 graham cracker cookies into crumbs.
Coconut flakes can be sweetened or unsweetened.

Garlic- cheese swirl

Delicious garlic cheese swirl great for evening snack or picnic. They are soft inside and crispy top with bursts of  cheese and herbs in every bite. Enjoy!!

Preheat the oven at 400 degree Fahrenheit

Garlic- cheese swirl

Ingredients
1 sheet- puff pastry- thaw to room temp,
1 1/2 spoon- Italian herbs,
1/4 cup- mozzerala cheese,
2 cloves- garlic,
2 tablespoons- olive oil,


Description
In a small bowl, take olive oil and add minced garlic, Italian herbs and mix well.
Spread the mixture all over the pastry sheet and spread cheese on top of it.

Slowly roll the pastry sheet and cut into equal peices( approx 1 inch each).

Place them in baking trays.

At 400 degree Fahrenheit’s, Bake for 13 to 15 min.
Yummy garlic – cheese swirls will be ready.
