Badam/ Almond Burfi


Burfi’s are very popular sweets in most of the festivals of India.Burfi’s can be made with variety of ingredients and trust me all tastes heavenly.

Badam/ Almond Burfi is one of them and it’s made with Almond flour.

Burfi’s can replace Candies and kids love them..

Believe me you can’t stop at one.. easily can have 5 to 6 pieces.

Badam Burfi is Rich in taste and good for health as Almonds are less fat compared to cashew’s Burfi.

Ingredients

1 cup – almonds / badam,
1 cup – granulated sugar,
1/2 cup -water,
1/4 cup – whole milk,
1 teaspoon – cardamom powder,
2 to 4 tablespoons – ghee/clarified butter

Description

Soak almonds/badam for 2 hours or 15 minutes in hot water.
Peel the skin by gently squeezing the soaked almonds.

Place them on napkins and pay dry.
In a mixer, grind them dry to smooth powder.
In a heavy bottomed pan or non stick pan,

Prepare sugar syrup by putting sugar and water . Stir occasionally until u get one string consistency (if u take little syrup in your finger tip and stretch using thumb ,should see a string).


Now, add powdered almonds/badam and mix well. When it starts bubbling,add milk,cardamom and ghee.

Keep stirring continuously until it absorbs all the moisture and collects to one side like a huge ball.

Switch of the stove and spread on a greased (with ghee) parchment paper to cool for 10 minutes.
Knead the dough slightly with your hand and using a roller roll into 1/2 inch circle.
Cut into desired shapes.


Badam / Almond Burfi is ready to Enjoy!!

Note

Patience!! Patience !! Is the key .You have to really keep stirring until you get the right consistency which takes 10 to 15 minutes of stirring after adding milk.

Bele obbattu/Holige /Puran poli

Obbattu /Holige is a Karnataka special sweet dish made with dal , jaggery and all purpose flour.Prepared mainly in festivals like Ugadi ,Deepavali and weddings or any other auspicious occasion.
It’s similar to Mahar-ashtrian dish Puran Poli.
We can do varieties of obbattu by making different stuffings like coconut,dry fruits etc
My personal favorite is Bele/dal obbattu.
I have shown a easy method which I learnt from my Aunt last year.
Try this easy method of preparing Obbattu and share with your family and friends.

Ingredients

1 cup – Maida/ all purpose flour,
1/2 tsp – turmeric powder,
Pinch of salt,
1/2 cup – water or as required,
4 tablespoons – oil

For filling

1 cup – Chana dal or toor dal,
1 1/2 cups – jaggery ,
2 to 3 – elachi/ cardamom pods/ powder
2 tablespoons – coconut powder (optional)

Description

Prepare the dough
mix all purpose flour, turmeric and pinch of salt.

Now make a soft dough by gradually mixing water.
Pour oil on top of dough. Cover and let rest for 3 to 4 hours.


Prepare filling

At medium heat,In a vessel add dal and water.cook dal for 20 minutes until it easily breaks into pieces when u break dal in your hand.. don’t overcook and make it mushy.
Switch of the stove and completely drain the water.

Add crushed or powdered jaggery to hot drained Chana dal. Sprinkle some cardamom and mix.

In a electric mixer, grind dal, jaggery mixture into fine paste( no water added while grinding ).filling is ready.


Knead the rested dough slightly and take a ball sized dough.
Apply oil to both your palms and flatten the dough, place ball shaped filling on flattened dough and cover it by dough , by pinching off any excess dough.

On a parchment paper, spread oil and start rolling the obbattu into a thin round shape .

Heat the pan/skillet .

Place the obbattu on hot pan and cook both sides by sprinkling some oil/ ghee.

Above recipe makes 8 to 10 Obbattu/Holige.

Enjoy by drizzling some ghee in top of it.

Notes

– Toor dal can be used instead of Chana dal.. it tastes good too.
– Add some coconut powder to filling for greater taste.
– After grinding, if filling/stuffing is not thick.. place on stove and cook by stirring until it becomes thick.

Simple Vanilla cupcakes

Simple and easy vanilla cupcakes recipe . Follow this simple recipe for the perfect,moist and flavorful cupcakes.

Vanilla cupcakes should be enjoyed fresh from the oven for its great taste..

Ingredients

1 1/3 cup(172 gms) – All purpose flour/Maida,
2 teaspoons – Baking powder,
pinch of salt,
1 cup (200 gms) – granulated sugar,
1/2 cup /113 gms/1 stick -unsalted butter,softened,
2 eggs,at room temperature,
1 1/2 tsp – vanilla extract
1/3 cup – milk

Description

Preheat your oven at 350 Fahrenheit’s/175 degree Celsius .

Line your Cupcakes tins with liners.

Mix and sift flour,Baking powder and salt.

In a Medium sized bowl,with the help of electric or hand mixer beat sugar,butter,eggs(one at a time) ,Vanilla extract until smooth and nice.

Now,alternatively add flour mixture and milk to wet ingredients,scraping the sides of the mixture beat until smooth and well Incorporated.

scoop the batter into your lined cupcake tins(3/4 Th) and bake for 18 to 20 minutes or until  toothpick inserted in the middle of the cupcakes comes out clean.

cool completely and frost with your favorite frosting!!

Notes

– Add 2 tablespoons of milk if cake batter is too thick.

– do not over bake cupcakes or else it will turn very hard.

– eat fresh and can stay at room temperature for 2 to 3 days.

Breakfast ideas for kids

Breakfast is the most important meal of the day.When it comes to kids, it’s very difficult to feed them healthy breakfast and get them ready for school .

I have listed few easy and quick breakfast recipes in the video below. You can include many other recipes as per your child taste. In a healthy breakfast,Quantity is not important but what counts is  amount of proteins, carbs ,calcium etc..

replace smoothies in place of milk (great combination of fruits and milk).

– use cereal of less sugar or zero sugar with milk.

– sandwich made with your kid favorite stuffing.

With these simple breakfast kids can eat quickly (10 to 15 min) and get out the door in time to school.

Important tip

Breakfast is so important not only for kids but to everyone. It’s a challenge for parents to feed kids breakfast.BUT DO NOT SKIP breakfast. Just adding one favorite food of your kid to breakfast makes kids show interest to eat .

Besan Ladoo(Indian sweet)

Besan Ladoo is a Indian Sweet made with few ingredients like Besan/chickpea flour, powdered sugar and ghee.
Ladoo’s are loved by all including kids. Besan Ladoo is usually prepared in festivals like Diwali or Navratri.
Try this easy ,quick and tasty Besan Ladoo.

Ingredients

2 cups – Besan/chickpea flour,
1 cup – powdered sugar,
1 cup – ghee/clarified butter,
1/4 cup – dry fruits(to decorate)

Description

In thick bottomed pan,at medium low heat, dry roast besan flour by stirring continuously for 8 to 10 minutes or until you get nice aroma of roasted besan .

Take it out to a plate.

In the same pan ,melt ghee and add roasted besan and cook by stirring continuously for 10 to 12 minutes. Color changes to slight brown and smells good.

Switch off the stove and take out of stove.

Immediately add powdered sugar and mix with spoon.

Let it slightly cool, when it’s still warm, grease your palm with ghee and start making equal size besan ladoo’s .

Decorate with any dry fruits of your choice.

Notes

– Roast the besan well. It will not turn out good if besan is raw or undercooked.

– If you do not have powdered sugar, grind the granulated sugar into powder.

– Can mix the crushed dry fruits into the besan mixture.

Bisibele bath (using cracked wheat/ broken wheat in instant pot)


Bisibele Bath is a Karnataka style rice cooked with dal and vegetables. Spiced with readymade or homemade bisibele Bath powder. Enjoyed when it’s hot!!
I have substituted rice with cracked wheat (Just to have more bisibele Bath without guilt) believe me tastes the same or I should say better than prepared with rice.
Here,I have used instant pot to prepare bisibele Bath , you can use pressure cooker for the same.

Ingredients

1 cup – cracked wheat/rice,
1/2 cup – toor dal,
1 small – onion,
7 to 8 – curry leaves,
1 tsp – ginger-garlic paste,
3 tsp – salt,
3 tsp – bisi bele bath powder,
1 tsp – corainder powder,
2 cups – vegetables(carrot,beans,
Capsicum,peas etc..),
2 – tomatoes,
1 tsp – mustard seeds,
1 tsp – cumin seeds,
Oil,
5 cups -water

Description

Rinse and drain cracked wheat.
Switch on the Sauté key of the instant pot.
Heat some oil and fry chopped onions and curry leaves .(can add red chilies-optional)

Add ginger garlic paste and vegetables (of your choice). Cook until onions are golden brown and switch of the Sauté mode.
Add dal, cracked wheat(or rice) and 5 cups of water. Add tomatoes
Add salt and spices like bisibele Bath powder(I have used readymade powder) and coriander powder.
Mix. Close the lid of Instant pot and seal the steam nozzle .
Press manual button and cook for 14 minutes.(if using pressure cooker , cook until 3 whistles)
Switch off and naturally release the pressure.
Open the lid and Enjoy bisibele Bath while it’s still hot!!

Black bean Burger(homemade ,vegetarian)


I don’t remember when I had my first black bean Burger.. but I became hard core fan after having that.
When I went to try on my own( till then I was having frozen patties) .. I didn’t expect that to come out sooo yummy.

Best vegetarian patties without potatoes..

Here is my recipe of black bean Burger. Healthy and tasty!!

 

Ingredients

1 cup – black bean(soaked and cooked),
1 small – onion,
2 cloves – crushed garlic ,
1 small – bell pepper/capsicum,
1/2 cup – grated carrot,
1 cup tsp – chili powder,
1/2 tsp – coriander powder,
1/2 tsp – garam masala,
2 tablespoons – poha/oats/ bread crumbs,
Ketchup,
Water,
Mozzarella cheese,,
Butter /oil
Burger bun /bread

Description

Rinse , soak(overnight or 6 hours) and cook black beans or use canned black beans (takeout bean liquid).

Mash the beans until completely mashed.

In a pan, at medium heat, drizzle olive oil,fry chopped onions,crushed garlic, bell peppers and grated carrots.
add chili powder,coriander powder, garam masala , salt. Mix


Add poha/flattened rice or bread crumbs or oats and water . Close the lid and cook for 5 minutes.

Add mashed beans to mixture and cook for 2 to 3 minutes.

Rest it for 15 minutes.


Grab some mixture of beans and form into nice patties.
In a skillet , heat the pan ,melt some butter and cook the patties both sides until golden brown. Sprinkle cheese on top of patties.


Grill the buns with butter in a skillet or griddle . On top of bun Spread ketchup ,onion rings, bell peppers.

Top with bean Burger and one more layer of onion, bell peppers , your favorite sauce etc and close with another piece of bun.
Yummy black bean Burger is ready to serve!!

Dry fruits Modaka

 


No festival is complete without sweets.
Indian specialty is each festival has a signature dish or sweet.
Modaka is a sweet prepared on Ganesha chaturthi (festival in India) by many South Indian families.
It’s been said that Modaka is Ganapati’s (god )favorite.
Varieties of Modaka can be done. Dry fruits Modaka is one of them and  is my favorite.

Ingredients 

For Outer shell

2 cups – All purpose flour/ maida,
2 tablespoons – sooji rava
1/2 teaspoon – salt,
2 to 3 tablespoons – hot oil,
Water (approx 3/4 cup)

For inner filling

1/2 cup – dry fruits (almonds, cashews,dry dates,raisins)
1 teaspoon – sesame seeds,
1/2 cup – coconut powder,
1 1/2 cups – jaggery,(brown sugar),
1 tsp – cardamom pods/powder,
1/2 cup – Water

Oil to fry

Description 

Firstly, prepare dough to make outer shell.
Mix flour, salt and hot oil. By gradually adding water make a dough .
Cover and keep it aside for 30 minutes.


Meanwhile, prepare inner filling.

Slightly dry roast the sesame seeds and dry fruits except raisins. Grind it dry to a smooth powder(little coarse is also fine). Now add raisins to the dry fruits mixture.
In a heavy bottomed pan/non- stick pan melt Jaggery, add coconut , dry fruits mixture,cardamom pods and mix well.
Add water and bring it to boil by stirring occasionally.
Mixture starts thickening by observing all water. Continuously stir for 2 to 3 minutes and switch of the stove..

Let it cool.


Now, roll the dough with rolling pin by dusting some flour on surface into a big circle.. with the help of cup or cookie cutter .. cut dough into many small round shape dough.
Take a dough which is cut in small circle. Fill it with 1 tablespoons of prepared dry fruits mixture .

Pinch the edges and bring all edges together , twist and seal . Take out the extra dough if any.

Repeat the procedure and make modaka’s

Heat oil in a pan. At low medium heat
Fry Modaka’s until golden brown color.

Take our from oil and place on a tissue paper.

It’s ready to serve!!

Notes

While making filling ,if u add more water. It ll take more time to absorb all moisture. Stir for more time.

Coconut Burfi / kobbari mithai


Coconut Burfi is a Indian Sweet made with few ingredients like coconut ,sugar,cardamom,water and little ghee.
Can be prepared with fresh or dry coconut .

Fresh coconut is offered to god in festivals and later that coconut is used to make sweets like Burfi/mithai. Its tradition in many South Indian families.

Try this easy ,quick and tasty Coconut Burfi.

Ingredients

1 cup – fresh coconut
3/4 cup – sugar
1/4 cup – water
1 teaspoon – cardamom
4 tablespoons – ghee/ clarified butter


Description

Grease a plate /pan with ghee or clarified butter.

Grate the coconut and dry grind it in mixer into fine crumbs.
At a medium heat, in a heavy bottomed pan, place coconut,sugar and water. Stirring occasionally bring it to boil .

It starts thickening, now add cardamom and ghee. Continuously stir until all moist is absorbed and collects to form one nice dough kind.
Switch off the stove and quickly transfer to greased plate and flatten it with back of greased spoon.
Run the knife to make desired shape and cut .

Tasty kobbari Mithai/Coconut Burfi is ready to serve.

Notes
– Can peel off the skin of coconut for white colored Burfi.

– if you are using dry coconut, dry roast it before using.

– If you over cook it and turns into crumbles,add little milk and cook few more minutes.

South Indian filter kaapi /coffee (no coffee filter required)

Filter coffee is coffee drink made from decoction (obtained by brewing ground coffee)mixed to piping hot milk .
You will find this coffee in many South Indian homes .

If you are a coffee lover, should give it a try.

I always use Cothas brand coffee powder

Which has a ratio of (85% coffee & 15% chicory ).

Ingredients 

1/2 cup – water,
1 teaspoon – coffee powder
1 teaspoon – sugar,
1/2 cup – milk

Description 

In a pot bring water and coffee powder to boil. When it reaches rolling boil point. Switch off the stove and filter the decoction. let it rest for 20 to 30 minutes.
Boil milk until it bubbles and forms froth in stove (for better taste)or microwave high for a minute.
In a cup,add coffee decoction(desired quantity ) ,sugar and mix piping hot milk of desired quantity.
Using another coffee cup mix well.
