Cake like brownies from a box


Yes !! I made brownies using box mix .It’s so easy and can be made quickly.Cake like brownies are so rich and yummy.. you can’t stop at one or two..

Ingredients

– Brownie Box ,

– Eggs,butter and water as per the instructions on the brownie box mix


Description
Preheat your oven at 350F(or 325 F for darker pan)

Grease the 8″Pan with butter or cooking spray.

Prepare cake batter as directed in the box.

Pour into the greased pan and bake for 30 to 35 minutes.

Allow it to cool and cut into pieces.

Enjoy!!

Note

– Can add raisins,nuts or M&M’s to the batter and bake .

Ingredients

3 large – Hass Avocados,
1 small – onions,
3 to 4 – green chilies,
1/4 cup – cilantro/coriander leaves,
2 Tablespoons – lemon juice,
1 teaspoon – salt,(as required)
1/2 teaspoon – ginger powder,
1/2 teaspoon – cumin powder

Sour cream,Minced green chilies to garnish.


Description

In a medium sized bowl, peel the skin of avocados , remove seed and using fork smash Avocados into smooth paste.

Squeeze lemon juice to it and mix .

Add onions, finely chopped deseeded chilies ,Finely minced coriander leaves.
Mix salt, cumin and ginger powder.
Garnish with little sour cream, green chilies and coriander leaves.

Enjoy guacamole with tortilla chips.

Notes

– optionally you can add jalapeños, tomatoes,capsicum, corn, peas,green onions,

– If you like to store guacamole for later use, store it in air tight container in refrigerator and to prevent guacamole from turning brown/black you can leave the seed/pit in the mixture until you use.

Mango Custard 


Mango is called ‘king of the fruits’. Whole world loves it.When mango is in the season try this simple , easy , less ingredients recipe Mango custard. Mango fans shouldn’t miss this. It’s sooo tasty.

Ingredients

1 1/2 cups – mango puree,
1 cup – whole milk,
1/4 cup – granulated sugar,
2 tablespoons – custard powder(vanilla flavor)

Description

In a small bowl,mix custard powder with little warm milk until it dissolves and keep aside.
At low medium heat, In a pan add milk and sugar,bring milk to boil. Now add dissolved custard and boil constantly stirring it for few minutes.(3 to 4 minutes).

Switch off the stove and keep stirring for sometime.

Let it cool and add mango puree and whisk well.
Refrigerate for 3 to 4 hours and serve chilled.

Notes

– can use canned mango puree . If you are making puree from fresh mangoes add some sugar ,milk and blend.

– Can mix some mango chunks.

– For non flavored custard powder, add 1 teaspoon of vanilla essence to the recipe.

Vegetable Cutlet

Vegetable Cutlet is a great evening snack. Best appetizer for any parties. Kids loves this snack and easy way to make them eat vegetables.Cutlets can also be used as patties in burgers.

Try this easy and healthy recipe.

Ingredients

10 small or 5 medium sized – Potatoes ,
1 – Onion,
2 – green chilies,
1 tablespoon – ginger paste,
1 cup – mixed vegetables ,
1/2 cup – oats(quick 1 minute),
1/2 cup + 1/2 cup – bread crumbs,
2 tablespoons- Lemon juice,
1 teaspoon – garam masala,
1 teaspoon – chili powder,
1 teaspoon – chat masala,
1 teaspoon – salt,
Oil

Description

Cook and peel the skin of potatoes and smash them to paste.
In a pan, heat 2 to 3 tablespoons of oil and cook onion until transparent, add ginger ,green chilies and sauté it.
Add mixed vegetables and cook until vegetables are cooked firm but not mushy . (If you have pressure cooked fresh vegetables then drain water and makes sure it is moisture free and not mushy).

Mix salt , spice and cook well.
Switch off the stove and mix smashed potatoes,oats, bread crumbs, squeeze some lemon.
Mixture should be non- sticky , make equal sized patties .

Coat both sides of patties in bread crumbs.
Heat a pan , drizzle some oil(3 to 4 tablespoons) and shallow fry patties both sides Until golden brown.
Serve with green chutney and ketchup.

Notes

– use vegetables of your choice.Can include cauliflower, capsicum,spinach.

– easy if you pressure cook fresh vegetables firm and mash.

– mix more bread crumbs if mixture is sticky.

– adjust salt and spice

– can deep fry patties.

– If you do not have bread crumbs, put some bread pieces to mixer and grind to powder.

Black bean curry

Black bean is rich in proteins,fiber, vitamins and minerals.best food for vegetarians. Try this black bean curry recipe . Easy and healthy

Ingredients

2 cups – Black beans,
4 cups – water,
1 -onion(medium sized),
4 – green chilies,
1 teaspoon – urad dal,
1 teaspoon – mustard seeds,
1 teaspoon – cumin seeds/jeera
2 teaspoons – coriander powder,
Salt,
Cilantro,
Butter and oil

Description

Wash and soak black beans in water overnight.

Drain water and place beans in pressure cooker, add 4 cups of water ,salt and oil.Close the lid and cook until 3 to 4 whistles.

Beans should be cooked thoroughly.

Heat oil in pan and tamper it with Urad dal, cumin seeds/jeera, mustard seeds,curry leaves(optional).
Sauté onion and green chilies until golden brown.

Now add cooked beans and cook for 5 to 8 minutes by closing lid.

Add coriander powder and cook for few more minutes.

Add butter and coriander leaves and cook for 2 to 3 minutes.

Squeeze some lemon juice if you wish and salt if required.

Garnish with some coriander leaves and heavy cream/butter.

Note

– same recipe holds good for other beans like soy beans, kidney beans.

Vanilla ButterCream frosting 

Vanilla buttercream frosting is best for any cake.
Very light, smooth and fluffy.


Ingredients
1 cup(227 grams) – Unsalted butter, at room temperature(keep outside for 3 hours),
3 cups(390 grams) – powdered sugar/Icing sugar,
1 teaspoon – vanilla extract,
2 tablespoons – whole milk


Description

In a hand mixer or electric mixer whip butter until smooth and color changes slightly.
Now add powdered sugar 1/2 cup at a time and beat so that sugar is incorporated well.
Add vanilla ,milk and beat at high speed for 4 to 5 minutes until smooth and fluffy.
Use it right away or refrigerate for 2 weeks.

Frost on your favorite cake and enjoy.

Homemade Vanilla cake


Simple vanilla cake which is made with very less ingredients and tastes heavenly.
After chocolate cake , vanilla cake is the next most liked cake by all.

Try this easy recipe .

Ingredients

1 1/2 cups(180gms) – all purpose flour,
2/3 cup(150gms) – granulated sugar,
1/3 cup(75gms) – unsalted butter,melted
1 teaspoon -baking Powder ,
1/2 teaspoon -baking soda,
1/4 teaspoon – salt,
1 teaspoon – vanilla extract,
2 eggs,at room temperature,
1/2 cup – milk


Description
Preheat your oven at 350 Fahrenheit/175 Celsius.

Grease heart shaped pan(bcoz it’s Valentine’s Day)with butter.

Mix and sift flour,baking powder,baking soda and salt.

In a medium sized bowl,with the help of electric or hand mixer beat sugar ,melted butter ,eggs(one at a time), vanilla extract until smooth and nice.
Now, alternately add flour mixture and milk,scraping the sides of the mixture beat until smooth and well incorporated .

Pour the batter to greased pan and bake for 25 to 28 minutes or until toothpick inserted in the middle of the cake comes out clean.
Cool completely and frost.

Mango Pie 

Who doesn’t love Mango?

Mango pie is quick and easy dessert for any parties. Follow this simple recipe and surprise your guests.

Ingredients

Pie crust 

1 cup – Graham crackers Crumbs
1/3 cup – melted unsalted butter

Filling

14oz – Condensed milk
1/4 cup – Heavy cream or
Whipped cream
1/4 cup -Agar agar strip or
1 tablespoon Agar Agar powder
250ml – water
2/3 cup – Mango purée


Description

Soak the Agar agar strip /powder in 250 ml of water for 15 minutes.

Pie crust – in a bowl, mix crumbs and melted butter.Spread and press on a 6 – inch foil pie pan, even to the sides.

Bake at 350 degree Fahrenheits for 6 to 8minutes.

Filling – in a medium sized bowl, mix condensed milk and whipped cream.

At medium heat,Bring the Agar Agar to boil along with water. In 15 minutes, Agar Agar will completely dissolves .switch off the stove and when it’s still warm add mango purée and mix.(Agar Agar soon turn into jelly at room temperature, mix mango purée quickly)

Now add it to condensed milk and whipped cream .(you can blend all mixture into smooth paste in blender.)

Mix and pour it to prepared pie crust.

Cover and refrigerate for 6 hours or overnight .

Mango pie is ready!!

Notes

– can use store bought pie crust or grind some graham crackers into fine powder to make crust out of it.

– If you are using heavy cream then beat it with hand mixer until it forms soft peaks and turns into whipped cream.

– Agar Agar is a jelly like substance which give jelly ness to your pie.Also,a vegetarian substitute for gelatin.

– can use purée from fresh mango(add sugar if required) or canned mango purée (I got it from Indian store)

– Agar agar can be found in Asian stores.buy flavorless Agar Agar powder.

– If you are using gelatin, above recipe requires one Teaspoon of gelatin powder.

Churumuri 


Churumuri is an Mysore street snack made with puffed rice,carrot, onion,tomato, coriander leaves, peanuts ,salt and spice.I grew up eating this snack from same vendor in Mysore.

I have tried this to make at home.. it’s simple ,healthy and best evening snack .

Ingredients

2 cups – puffed rice,
1/4 – roasted peanuts,
1/2 – small onion,
1/2 cup – carrot,
1 – small tomato,
1/4 cup – chopped cilantro,
1/2 teaspoon – salt,
1 teaspoon – chili powder,
2 tablespoons – olive oil
Lemon juice


Description

In a medium sized bowl,add salt and chili powder to puffed rice and mix well.

add roasted peanuts,chopped onions, grated carrot,cilantro ,tomato and mix.

Mix olive oil and squeeze some lemon juice .

Churumuri is ready to enjoy.

Notes

– cannot store ,so serve immediately .

– If you are doing it in large quantity, do it in batches .keep the mixture ready and add to required puffed rice.

– Can use 1 teaspoon of green chili paste instead of red chili powder.
