Mango kesaribath / Mango Shira

Are you craving for any sweet and Mango??if your Answer is Yes, then quickly try this easy,delicious sweet dish Mango Shira.
Believe me it tastes so good and can be done in 15 minutes.

You don’t need to be expert to prepare this.. even a beginner can do it without any difficulty.

Do this simple sweet and impress your family and friends.

 

Ingredients

1 cup – fine Sooji rava
1 cup – mango pulp ( canned or fresh)
1 cup – sugar
1 cup – water
6 to 8 spoons – ghee/clarified butter
1/4 cup – Dry fruits ( cashew and raisins )
1/2 tsp – Cardamom powder for flavor


Description

Peel mango skin,cut into pieces. using blender,blend it to smooth paste to make Mango puree.

At medium heat,In a medium sized pan,heat 4 tablespoons of ghee, fry the cashews until golden brown and fry raisins.
Take them out in a bowl .

Add the rava and fry it well in the remaining ghee, until it gives nice aroma

Take the fried rava out in a plate to cool down

Now ,add water and sugar to the pan ,let the sugar dissolve and bring it to boil stirring occasionally .add mango pulp and let it boil .

Simmer the flame and add the fried rava little by little stirring continuously to make sure there are no lumps. Mix it well. Let it cook for few min.

Add cardamom powder and few spoons of ghee and mix.

turn off the flame , close the lid & let it settle for 5 min.

Mango kesaribath is ready . Serve hot or cold.

Note
– can add more sugar according to your taste.

– If mango is not sweet,mix some sugar while grinding .

1 teaspoon – vanilla extract,
2 tablespoons – honey,
1/4 cup – almond pieces,
1/4 cup – rainbow sprinkles

Toppings

Gummy bears,mini KitKat,mini mint ,mini m&m’s ,chocolate chips,dried blueberries,walnut chunks,almond/pecan chunks,mini Oreo’ s.

Small pieces of fruits like strawberry,kiwi, blueberries .

Chocolate syrup


Description

In a blender, blend cream cheese, vanilla yogurt and vanilla extract into smooth paste.

Mix  almond pieces and rainbow sprinkles .

Pour it a container and spread some honey , cover and freeze for 3 to 4 hours.
Enjoy with your favorite toppings !!

Berries frozen yogurt is a mixture of blueberries and strawberries. It is little Sour. Can replace Greek yogurt with vanilla yogurt for sweet taste. I like to top with nuts,fruits and some candies.

Ingredients

1 cup – frozen blueberries,
1 cup – Greek yogurt,
1/4 cup – sugar,
2 tablespoons – Honey

Toppings

Keep the blades of the hand mixer in freezer for half an hour.

In a bowl, beat chilled heavy cream until it whips to smooth and forms soft peaks.

Now,add vanilla flavored yogurt and sugar mix well.
Mix 1 teaspoon of vanilla extract.

Pour to a container and cover with cling wrap and foil for 2 hours.

Take out mix it with spoon..again freeze for two hour and mix .
Freeze for 6 hrs or overnight.

Scoop yummy vanilla frozen yogurt.

Add your favorite toppings and Enjoy!!

Tres Leches Cake

Tres Leches meaning 3 milks is a sponge or butter cake soaked in 3 types of milk condensed milk,evaporated milk,heavy cream. Cake is moist and delicious,

Ingredients

Plain Cake /Vanilla Cake (13 * 9 pan size)[check my vanilla cake recipe]

3 types of milk

1 cup – Heavy cream
1 14oz can – Condensed milk
1 12oz can – Evaporated milk

For whipping cream

1 cup – heavy cream
1 cup – powdered sugar



Description

Place a cake in a pan which has sides and Pierce the entire cake with the help of fork.
In a medium sized bowl,mix heavy cream,condensed milk,evaporated milk by giving a good stir.
Now,pour the mixture all over the cake and let it rest for 30 minutes or until cake completely absorbs milk mixture.
With the help of hand mixer,whip heavy cream and powdered sugar until it forms soft peaks.
Spread evenly on the cake and decorate with some nuts and your favorite fruits.
Serve the cake or refrigerate for later use.

Garlic -chili paneer Appetizer 


Garlic chili paneer is a spicy ,garlicky snack made with less ingredients .
It’s great as an appetizer or side dish.

Ingredients

200 grams – Paneer/cottage cheese
4 tablespoons – all purpose flour/maida
1/2 tsp – salt,
2 tsp – garlic paste,
1 tsp – chili powder,
2 tsp – ketchup,
1 tsp – Italian herbs,
2 -3 Tsp – water
Oil, chat powder
1/4 tsp – soda(optional)


Description

Cut paneer into thin slices.

In a bowl, mix all purpose flour/maida,salt ,chili powder,grated garlic,ketchup,Italian herbs.

Add water and make a thick paste.

Coat and Leave the(marinate )paneer slices in the mixture for about 5 minutes.

Heat a non-stick pan at a medium heat,Pour 3 to 4 tablespoons of oil.

When oil gets hot,add marinated paneer slices and cook till golden brown.

Flip and cook the other side.

Sprinkle some chat powder and enjoy with some coriander chutney.

Banana Avocado Icecream 

Ice cream is a sweetened frozen dessert. Usually made with dairy and fruits of your choice.

Try this simple recipe to make delicious,healthy Ice-cream.

Ingredients

2 – Bananas,
1 – Avocado,
1/2 cup – milk,
3 – dates,
1 tsp – vanilla extract,
1 cup – ice cubes,
1/2 cup – sugar(optional)


Description

Cut bananas into cubes and freeze it for an hour.

Peel Avocado skin ,remove the seed  and cut into pieces.

In a blender,add frozen bananas,Avocado,dates (remove seeds),milk ,vanilla extract and ice cubes.add sugar if required. Blend everything in high speed into a smooth paste.

Transfer to a container and freeze for 5 hours or overnight.

Scoop fresh homemade banana Avocado ice-cream.Enjoy!!

Note – 

If ice – cream is too hard . Leave it for 5 minutes on counter and then dig.
Add honey for great taste.

Oatmeal Recipe (stove top,steel cut oats/old-fashioned )


Oatmeal is quick and healthy breakfast.
Oats are among the healthiest grains on earth.gluten-free ,great source of important vitamins,minerals,fiber and antioxidants.

Oats is preferred breakfast of many. We get as rolled oats,quick oats,(instant oats)and steel cut oats in market. Quick oats are pre-cooked,dried and rolled,which cooks quickly than rolled or steel-cut .

Steel cut oats sit lower on Glycemic index,lower in calories and 0g Sugar compared to Rolled oats or quick oats.

Recipe below shows easy method of using steel-cut oats.

Ingredients

1 cup – water,
1 cup – milk,
1/2 cup – steel cut oats,
1/4 cup – raisins,
1/4 cup – cranberries,
Sugar or honey (optional),
Fruits of your choice

Description

In a medium size pot, at medium heat place water and add Oats . Let it boil and then add milk ,raisins , cranberries,pinch of salt(optional).

Cook for approx 5 minutes stirring occasionally.

Turn of the stove when milk bubbles up and starts flowing from the stove.

Close the lid and let it rest for 4 to 5 minutes.

Enjoy this healthy breakfast with your favorite fruits!!

Note – if you are using Instant Pot, mix everything and cook for 3 minutes and rest it until natural release .

Ingredients

1 cup-Rice
1/2 cup-Quinoa
3 cups – water

Wash and drain Rice and Quinoa.mix it.cook it in pressure cooker until 2 Whistles or instant pot. Enjoy with Sambar,Rasam or Yogurt.

Baking Basics 101 from Quick Treats

Baking Basics 101

1. Keep all your baking ingredients like flour, eggs, butter etc ..ready at room temperature.
2. Proper measurement is very important while baking. Better to invest on measuring cup and spoon.
3. Preheat your oven before 15 to 20 minutes of baking or start preheating and then prepare cake/cookie batter.
4. Butter your baking pan generously so your cake will not stick to the pan.
5. Don’t keep on checking your cake while it’s baking in oven.don’t leave the oven door open for long while baking.
6. Allow your baking goods to cool completely before cutting or frosting.. some cakes like upside down cakes are exceptional as we have to invert the cake and cool.

Reason for tip 1,3 and 5 is variation in temperature effects the baking goods and also main reason for not getting perfect cake.
