Homemade chocolate cake and chocolate frosting 

Chocolate cake which is made with very less ingredients and tastes heavenly.chocolate cake is the most liked cake by all.Try this easy recipe .

Ingredients

1 1/2 cups(180gms) – all purpose flour,
1/2 cup(50gms) – cocoa powder,
1 1/2 cups(300gms) – granulated sugar,
1 1/2 teaspoon -baking Powder ,
1 1/2 teaspoon -baking soda,
1/2 teaspoon – salt,
1 teaspoon – vanilla extract,
2 eggs,at room temperature,
1 cup – milk,
1 cup – warm water,
1/2 cup – vegetable/canola oil

Description

Preheat your oven at 350 Fahrenheit/175 Celsius.

Grease 8 and 10 inch round pans with butter.

Mix and sift flour,cocoa powder,baking powder,baking soda ,salt and sugar.

In another medium sized bowl,whisk eggs(one at a time), vanilla extract, milk, oil and warm water until smooth and nice.

Now, gradually mix dry mixture into wet ingredients until smooth and well incorporated .

Pour the batter to greased pans and bake for 30 to 35 minutes or until toothpick inserted in the middle of the cake comes out clean.

Cool completely and frost.

For frosting 

Ingredients

4 oz – unsweetened chocolate bar,
2/3 cup – unsalted butter,room temperature
2 cups – icing/powdered sugar,
1 1/2 teaspoon – vanilla extract

Description

In a medium bowl, melt chocolate in microwave for 1 minute stirring every 20 seconds.

using electric mixer beat melted chocolate,butter, sugar and vanilla extract until smooth. use 2 to 3 Tablespoons of milk if frosting is too thick.

Frost your cooled chocolate cake .

 Note – I have used Fondant for final decoration.decorate by your choice.

Blueberry  Pancakes 


Pancake is flat cake ,made up of flour, sugar, egg and butter. Generally used for breakfast menu. Pancakes can be topped with honey, maple or any fruit syrup and can be filled with blueberries,bananas …

Try this simple homemade light and fluffy Blueberry filled Pancakes.

Ingredients

1 cup – all purpose flour,
1 – egg,
2 teaspoons – baking powder,
1/2 teaspoon – salt,
1/4 cup – granulated sugar,
3/4 cup – whole milk,
1/4 cup – fresh blueberries ,
Honey /maple syrup

Yield 5 to 6 pancakes

Description

In a medium bowl, whisk flour, baking powder,salt and sugar.
Beat one egg in a separate bowl .

add egg and milk to flour mixture and whisk.fold some blueberries .
Set aside for few minutes.
At medium heat,heat the skillet , brush with butter and spread 1/4 cup of pancake batter onto heated skillet making 4 inch circle.

When bubbles appears on top of pancake  , flip and cook the other side until turns golden brown (3 min each side approximately ).
Serve with honey syrup or maple syrup.

Notes

– can substitute all purpose flour with wheat flour or half and half flour.

– Can drop blueberries, bananas on one side of pancake while it’s cooking and then flip.

– To check the griddle/skillet is ready, sprinkle water on pan and is ready if water skitters across the pan.

Macaroni Pasta 


Pasta is a Italian food made from a dough of durum wheat and water , stamped into different shapes. Macaroni is a variety of dry pasta.Most popular is elbow shaped and kids favorite.Pasta is usually cooked in hot water or baked. Macaroni can be used in mac and cheese, soup, salad etc..

Ingredients

1 cup – macaroni
2 – large tomatoes
1 clove – garlic
1 tsp – Italian herbs(optional)
Pepper powder,
Mozzarella cheese/cheddar cheese,
Salt to taste,
Ketchup,
1/2 cup – milk(optional)

Description

Place pasta in pressure cooker, add 2 cups of water and salt. Close the lid and cook until 1 whistle.

Do not overcook Pasta.
Drain excess water from pasta(keep some water).
In a mixer, grind garlic and tomatoes to smooth paste and add to pasta.
At medium heat, bring it to rolling boil and add pepper,Italian herbs ,cheese and ketchup.mix and cook for 4 to 5 minutes.(can add milk at this point).
Yummy macaroni Pasta is ready to serve!!

Notes

– Vegetables of your choice (zucchini,carrot,bell pepper,beans)can be added. Cook vegetables with pasta in pressure cooker.

Cake Pops

Cake pops is a form of cake which looks like lollipop .With just few ingredients and steps,you can easily make at home.

Kids love them. Can do with many flavor cakes and candies.

Ingredients

Cake(Any flavor)
Frosting(Any flavor)
Cake pop sticks
Chocolate melts
Sprinklers


Description

In a bowl, crumble cake into fine crumbs.

Now, add frosting little by little until cake is slightly moist and can hold round shape. Mix in hands.

Using a spoon, scoop some cake mixture and roll into tight ball and place on a parchment paper or butter paper. Repeat until all the mixture is rolled into balls.

Keep it in freezer for 15 to 20 minutes.

In a microwaveable bowl, melt chocolate/candy melts for 1 minute,stirring every 20 seconds or as per the instructions.

Dip the tip(1 inch) of the cake pop sticks in the melted chocolate and insert into the cake balls half-way.
Freeze for another 20 minutes.

Remove cake balls from the freezer and carefully dip in the chocolate until covered ( make sure chocolate is melted and not hard. If so,microwave chocolate for few more seconds).

Drip off the excess chocolate,swirl and tap on the bowl.

Quickly decorate with sprinkles and stick the cake pops into styrofoam to dry and place in refrigerator for 2 hours/freeze for 30 minutes.

Cake pops will be ready. Enjoy!!

Peanut chutney powder


I always prefer this chutney powder in my pantry. It is a side dish and can have with Idli,Dosa,Chapati,Rice etc..

Ingredients

1 cup – peanut,
2 teaspoons(or as required) – red chili powder,
6 to 8 cloves – garlic,
Few strands of – curry leaves,
1/2 teaspoon (or as required) – salt,
1/2 teaspoon – sugar



Description

At medium flame, In a non-stick pan Dry roast the peanut stirring occasionally .

Switch of the stove and when it’s still hot,add curry leaves and garlic.

Grind it into fine/coarse powder.
Transfer into a bowl,add red chili powder,salt and sugar as required and mix well(or grind once more to incorporate).

Peanut chutney powder is ready!! store it in airtight container .

Notes

– can add 1/4 cup of dry coconut.

– can keep in refrigerator for 15 to 20 days.

Homemade Chewy Caramel Candies 


Have you ever made Candies at home??Let’s try Caramel Candies with the ingredients which you can easily find in your pantry. Just 4 ingredients and little patience will give you delicious Caramel Candies.

Do we need an occasion to prepare the Candies?? Go to your kitchen try this recipe and surprise your family and friends.

Ingredients

1 1/2 cups – milk powder,
1/2 cup – whole milk,
1/4 cup(4 Tsp) – unsalted butter,
1 cup – granulated sugar


Description

Grease a pan with butter or ghee.

Take a non stick pan, at medium heat ,melt butter. Add Granulated sugar and keep stirring occasionally until color changes and starts caramelizing(takes around 10 to 12 minutes).
Now, add milk powder,whole milk and mix well.
When mixture starts boiling,keep stirring continuously(make sure no lumps).

Continue stirring until color changes to brown and it becomes thick and leaves the sides of pan .

Switch of the flame and transfer into greased pan.When it’s slightly warm(don’t let it completely cool)make desired shapes.

Notes

– Have patience,it takes good amount of time for stirring.

– Use butter paper/foil. Candy pieces may stick to each other.

Poppy seeds/gasagase payasa


Poppy seeds payasa is a Karnataka sweet/Kheer made with poppy seed, coconut and jaggery.Poppy seeds are used similar to sesame seeds in cakes,buns, etc

Drink warm or cold.

Many claims that you will fall asleep after drinking this payasa.. why don’t you try this drink to get some good sleep?

Ingredients

1/2 cup – coconut (fresh/frozen),
1 cup – jaggery/brown sugar,
1 tablespoon – Rice,
1/4 cup – poppy seeds,
2 1/2 cups – water,
1 teaspoon – cardamom powder,
1/4 cup – dry fruits(raisins,cashews,almonds)


Description

In a non- stick pan ,dry roast rice and poopy seeds for few minutes until rice turns puffed up and poppy seeds slightly turns brown and gives out nice aroma.

Grind it to smooth paste along with coconut and 1/2 cup water.
At medium heat ,take a medium sized pan and melt ghee and fry nuts and raisins .
Add jaggery and 2 cups of water.

After jaggery dissolves, add poppy seed ,coconut paste and bring it to boil stirring occasionally.
Add cardamom powder and switch of the stove.

Note

– filter jaggery water to remove impurities from jaggery (if any).

– Can add 1/2 cup of milk.

Easy Asparagus Recipe


Asparagus is a spring vegetable. Asparagus is low in calories and low in sodium.good source of vitamin B6,dietary fiber,protein,calcium,folic acid and iron.

Usually prepared as appetizer or vegetable side dish.

Try this easy oven roasted Asparagus appetizer.

Ingredients

1 bunch – Asparagus ,
2 tablespoons – olive oil,
1 teaspoon – Italian herbs,
Salt,
Mozzarella cheese,
Lemon,
Pepper, Ginger powder(optional)


Description

Preheat your oven 400 degree Fahrenheit.

Place a aluminum foil on a baking tray.

Remove the hard part (about 2 inches at the end)of the Asparagus and arrange in a single layer on baking tray.

Toss with olive oil,salt and Italian herbs.

Bake for 12 minutes. Take out and sprinkle cheese all over evenly and roast for 2 more minutes in oven .

Squeeze some lemon.

Pizza Dosa


Dosa(pan – cake) is a South Indian food made with fermented batter (made up of rice and lentils).How about making pizza using dosa as base?

A healthy pizza with your favorite vegetables and cheese.

Ingredients 

Dosa batter,
Butter,
Pizza sauce /tomato sauce,
Onion,capsicum or any vegetables,
Mozzarella cheese,
Chat powder,

Description 

Heat the non- stick pan ,put some oil and spread the dosa batter in circular way.

After few seconds,Melt some butter on top of it and spread pizza sauce ,your favorite vegetables,cheese .

Sprinkle some chat powder.

Cover with the lid and cook for 1 to 2 minutes or until cheese on top melts.

Cut into pizza slices and enjoy!!

Mango popsicle (just 3-ingredients,vegan)


Mango is called summer fruit. Mango Popsicle’s are great substitutes for any sweet dessert craving.Mango has many health benefits .

Try this yummy,healthy treat this summer.

Ingredients

1 cup or 2 mangoes (fresh or frozen),
1  or 1/2 cup orange juice,
1/2 lemon juice


Description

Blend all ingredients in a food processor or blender until smooth.
Pour mixture into Popsicle molds and freeze for 4 hours or overnight.
take out from freezer and keep molds  under warm water for a minute and carefully take out the Popsicle’s.

Enjoy!!

Notes

– substitute any fruit like berries ,kiwi,pineapple

– If you are using fresh fruit, refrigerate it,use chilled .

– Can substitute orange with any store bought orange juice.

– Add 2 to 4 Tsp of Sugar , if mangoes are not sweet.

– if you do not have popsicle mold,use small paper cups and ice cream stick.
