Sabudana kheer / tapioca pudding in Instant Pot

Sabudana kheer /tapioca pearl is a sweet dish made during Indian festivals. Taken after a whole day fasting or famously called as ‘fasting food’. Rich in fiber and good carbs helps to gain weight for underweight people .

Provides instant energy, gluten free and helps in muscle growth.

So why not do this delicious Kheer/pudding in our one pot?

Yes ,no mess , no worry of thin/thick pudding consistency.

Let the instant pot do the magic, you relax and enjoy the sweet!!

Ingredients

1/4 cup – sabudana / tapioca pearls

1 1/4cups – whole milk

1/4 cup – granulated sugar

1 tablespoon- ghee/clarified butter

1 tablespoon- raisins and chopped nuts

1 teaspoon – Cardamom powder

Description

Rinse sabudana throughly until water runs clear.

Soak it in fresh water for 2 hours.

Switch on the instant pot,Press sauté mode.

Add ghee/clarified butter ,roast raisins and nuts until raisins puffs up and nuts crispy and brown.

Switch off the sauté mode.

Now add soaked Sabudana/tapioca pearl ,milk,cardamom powder and sugar.

Stir well.

Close the lid ,seal the vent and cook on manual at low pressure for 6 minutes.

Once done cooking, switch off and allow it to naturally release the pressure.

Open the lid, stir once.

Enjoy hot or cold!!

Notes –

1 ) soak in hot water for 30 minutes to speed up the the process of soaking.

2 ) 1:5 ratio ,1 cup – sabudana pearls,1 cup – sugar ,5 cups – whole milk.

fat free milk can be used too.

3 ) extra nuts,raisins and saffron/kesar strands can be added once kheer is done .

4 ) kheer /pudding thickens as it cools .

If it becomes too thick ,add warm milk before serving.

5 ) sugar can be reduced according to your taste.

Simple peanut chat salad

Salad is not boring always!! It can be fancy ,tasty and healthy at the same time.

Ingredients

1/4 minced onion

1/4 cup shredded cabbage

1/4 cup diced tomatoes

1/4 cup cubes of avocado

1/4 cup roasted peanuts

2 tablespoons salted ,roasted pistachios

1 teaspoon chat masala

2 tablespoons yogurt /sour cream

1 teaspoon lemon juice

Description

In a bowl, mix all vegetables,avocado and give it a stir.

Coat them with yogurt or sour cream.

Sprinkle chat masala .add peanuts and pistachios.

Combine everything well and squeeze some fresh lemon juice.

Enjoy!!

Notes – quantity of vegetables can be adjusted according to your like and dislike.

Grated Carrot and pomegranate also gives crunchy and delicious taste.

No yeast ,2 ingredients pizza dough

Yes you read it correct!!

Just 2 ingredients and those are Greek yogurt and self rising flour.

Self rising flour is premixed with baking powder and salt .

Instant pizza cravings can be satisfied by using 2 ingredients and in just 20 minutes.

I have to admit , since no yeast and proofing time, it slightly tasted different from the traditional method of making pizza. It will be baked more like a biscuit but soft.

Said that, it definitely tastes awesome and a quick fix to pizza craving when you do not have time.

Check some tips at the end of this post.

Ingredients

1 cup – Greek yogurt

1 1/2 to 2 cups – self rising flour

1 tablespoon – oil(optional)

Description

In a medium size bowl, add a cup of Greek yogurt and mix 1 1/2 cup of self rising flour.

Keep mixing until you get non sticky dough is formed. If dough is sticking ,mix tablespoons of dough at a time .

Knead for 2 minutes and keep aside.

Ta -da ..2 ingredients pizza dough is ready!!

Preheat oven at 400F .

Roll pizza dough into a 8 to 9 inch circle . Dust some flour for easy rolling.

Place it on a pizza pan/baking pan.spread pizza sauce .

Add your favorite toppings(I have added onion,tomatoes,jalapeños,bell peppers )

Loads of mozzarella cheese on top. Sprinkle little salt and pepper.

Bake for 20 minutes at 400F .

Take out and pizza is ready!!

Tips and tricks

1 ) if you do not find self rising flour, make your own by adding 1 1/4 teaspoon of baking powder and 1/4 teaspoon salt to each cup of all purpose flour /maida.

2 ) use normal yogurt, If you do not have Greek yogurt.

3 ) I tried doing small size pizza on stove top. Roll 3 /4 inch circle .

switch on the stove,place pizza on heated Tawa/pan , flip when it’s slightly wet, add all toppings including cheese,cover and cook for 3 to 4 minutes or until cheese melts.

4 ) do not wait for edges to get brown unlike yeast based pizza, color on the edges don’t change much but will be cooked.

5 ) if you fry them in oil , it becomes bathura for chole

Snowball cookies with pecans

Snowball cookies are a famous holiday cookie,usually made during Christmas.

It’s so delicious and with pecans or any other nuts it is even better.

Traditionally made with walnuts, you can try with any nuts you like.

Cookies are soft ,tender and crunchy with a nutty interior and sweet exterior.

5 easily available ingredients from your pantry can make this delicacy anytime of the year, why wait for Christmas?

It is also called ‘Mexican wedding cookies’ traditionally used in their weddings. Russian teacakes, snowballs are the other names .

Ingredients

1 cup – crushed roasted pecans

1 cup – maida/all purpose flour

1/4 cup – granulated sugar

1/4 teaspoon – vanilla essence

Pinch of salt

1 stick /1/2 cup – unsalted butter at room temperature

Powdered sugar to dust

Description

Preheat oven at 400F and place pecans in a non greased tray and roast them for 8 to 10 minutes.

Let it slightly cool, crush them to powder.

Skip the above step if you have already roasted pecans/nuts.

Preheat oven at 350F and arrange a parchment lined baking tray.

In a bowl ,add butter, roasted pecans, flour, sugar, vanilla and pinch of salt.

Mix them together to make a soft non sticky dough.

Cover them with cling wrap and refrigerate for 30 minutes.

Take out of refrigerate and make small sized balls (1 1/2 tablespoons each).

Place it in a parchment lined tray and bake for 15 to 16 minutes.

Take out of oven, roll in powdered sugar and keep aside .

After 15 minutes,do one more round of sugar coating.

Delicious snowball cookies are ready to enjoy!!

Notes –

1 – skip roasting the pecans/nuts if you have already roasted nuts . Can roast on stove top for 5 minutes or until crunchy.

2 – be carful while coating sugar as it will be hot and fragile. Breaking of cookies is possible.

3 – store them outside at air tight container or refrigerate upto one week.

4 – reduces the granulated sugar to 2 tablespoons,if you do not like more sweet.

Sesame seeds and peanuts Ladoo

Sesame seeds is mainly used in month of January(month to honor the harvest) during festivals of Indians. Til/sesame and jaggery are winter perfect food which increases immunity and keeps body warm. Great snack for kids and has a good shelf life. During winters I do in batches and keep it for snacks cravings.

Ingredients
1 cup – peanuts1 cup – rolled oats

3/4 cup – sesame seeds/til

3/4 cup – jaggery

1 teaspoon – cardamom powder

3 to 4 tablespoons – ghee/clarified butter

Description

In a pan, at medium heat, dry roast peanuts until crunchy and well roasted.

Take it out and keep aside in a bowl.

Roast oats for 2 to 3 minutes and keep aside.

Now, roast sesame seeds until slightly brown and seeds puffs up.

Now mix all three roasted ingredients and add powdered jaggery.

In a mixer, grind them to fine powder .

Take it to bowl, add cardamom powder and melted ghee/clarified butter.

Mix everything and make lemon sized balls.

Above recipe makes 12 ladoo’s.

Keep it in a air tight container and enjoy as mid morning snack or for dessert craving.

Note – add 1 or 2 tablespoons ghee, if you find difficulty to make balls.

Homemade peanut butter

Have you ever tried making peanut butter at home? It’s so easy ,just 3 to 4 ingredients and you can make delicious peanut butter.

It takes less than 5 minutes and believe me you might never like store bought anymore (warning🤔).

Ingredients

1 cup – raw peanuts

1/2 tsp – salt

1 tsp – sugar

5 to 6 teaspoons – peanut oil

Description

In a pan,Dry roast the peanuts ,at medium heat.

Let it cool slightly.

In a food processor, grind roasted peanuts .

It will become powder and grind for a minute ,turns into paste and starts leaving oil.(natural oil from peanuts)

At this point, add salt,sugar, oil and grind until you reach the desired consistency.

Keep it in a airtight container and refrigerate.

Enjoy your homemade fresh peanut butter topping on bread, fruit or cookies etc..

Notes

— you can also roast peanuts in oven at 350F for 3 to 6 minutes until lightly brown and smells nutty.

— can use store bought already salted roasted peanuts and skip all steps ,Just grind them until you get desired consistency.

— it thickens up in the refrigerator,so watch out the consistency while making.

— To make crunchy peanut butter, crush 2 tablespoons of roasted peanuts and add to the prepared peanut butter.

— add/ grind 1 teaspoon cocoa powder to make chocolate peanut butter and 5 to 6 roasted almonds to make almond peanut butter.

Brussels sprouts fry

Brussels sprout is a vegetable,belongs to cabbage family.popular in Belgium (were grown as early as 13th century).

Brussels sprouts is rich in vitamin , minerals ,antioxidants ,a nutritional addition to your diet.

This recipe is the easiest and quick .

I always have Brussels sprouts as a snack or side dish.

It tastes delicious when cooked properly Crunchy outside and caramlized ,slightly soft inside. It is always a super hit.

Ingredients

2 cups – Brussels sprouts

1 teaspoon – cumin powder

1 teaspoon – salt

1/2 teaspoon – ground black pepper

1/2 teaspoon- ginger powder

2 -3 tablespoons – pumpkin seeds

Olive oil

Description

Wash Brussels sprouts and trim the edges,cut into half lengthwise ,collect the leaves which got separated while cutting (which we fry at end for crunchier taste)

In a thick bottomed pan or a cast iron pan heat olive oil.

Add the chopped sprouts, salt and spices . Close the lid and cook for 5 minutes.

Open the lid add pumpkin seeds and collected leaves . Fry by stirring for few more minutes until it is well roasted and golden brown(watch out don’t burn them).

Plate it and it’s ready to eat!!

Cauliflower fry

Cauliflower is a superfood with lot of important nutrients. High in fiber and vitamin B. Helps reduce weight and had choline that is essential for learning and memory.

Adding cauliflower for your regular diet is so easy and one of those recipe is cauliflower fry baked in oven or on stove top.

Can be prepared in less than 30 minutes.

Ingredients

1 1/2 cups – cauliflower florets

3 tablespoons – corn flour

2 tablespoons – rice flour

1 teaspoon – salt

1 teaspoon – chili powder,

1/2 teaspoon – garam masala

1 teaspoon – lemon juice

Olive oil

Description

In a bowl, Soak the cauliflower florets in salt water for 20 minutes.(my method of cleaning the cauliflower florets)

Preheat oven at 400 degree Fahrenheit.

Place parchment paper on a baking sheet.

Discard water and place cauliflower florets in a separate bowl , add corn flour, rice flour, chili powder, garam masala and salt.

Add 2 tablespoons water and Mix to coat the florets.

Rest them for 15 minutes.

Apply olive oil to parchment covered baking pan and spread the coated cauliflower florets .

Sprinkle some more oil over the top.

Bake for 15 -18 minutes or until you see golden brown florets.

Enjoy hot and crispy cauliflower fry with hot sauce or chutney

Note – can be done in stove top. Place the marinated cauliflower florets in a thick bottomed pan .Close lid and cook for 4 minutes and Fry them until golden brown by stirring continously .

Carful not to burn or overcook and make it s mushy.

Avocado chocolate pudding

Avocado pudding is delicious and not much sugar used. Infact you get all goodness from avocado and cocoa powder.

Why not try this easy recipe to satisfy your sweet tooth?

Avocado pudding done in 10 minutes.no cooking or baking.

Description

Melt chocolate chips in microwave until it melts and smooth @ 30 seconds interval.

Scoop avocado into bowl, using fork or back of spoon ,smash into smooth paste .

Add melted chocolate chips, milk, cocoa powder, salt, maple syrup, vanilla extract.

Using hand mixer , blend until smooth and silky(Approx 2 to 3 minutes).

Note – always take good avocado, not overripe one.

Chocolate Croissants (just 2 ingredients )

Chocolate croissants !!You all might have tasted this from Starbucks or any other pastry shop. It’s a snack to die for😋😋

My kids addiction towards it , made me try this Instant , easy, just 2 ingredients chocolate croissants recipe . Hope you all like it!!

Ingredients

1 package - frozen Puff pastry ,thawed

114 grams/1 bar - Semi sweet chocolate bar/chips ,

2 Tablespoons - Unsalted butter (optional)

Description

Thaw the puff pastry for 40 minutes to bring it to room temperature.

Preheat the oven at 400 F and line parchment paper on a baking pan.

Chop the chocolate bar into tiny pieces .

Unfold the pastry sheets on a slightly flour dusted surface.

Cut each into 3 squares , making total 6 squares.

Now add 2 tablespoons of chopped chocolate into center of each pastry square.

Fold and seal the sides.(use little water to seal).

Brush some melted butter on top.

Arrange on lined baking pan and bake it in oven for 18 to 20 minutes or until golden brown.

Take out ,allow it to cool little bit and drizzle chocolate syrup or sauce.

Serve warm with hot coffee/cocoa 😋😋

Note – best to have while it’s still warm. Not a good idea to save and eat.
