Mud Pie


Mud pie is a Chocolate based dessert. Made With simple ingredients and does not require any special cooking tools.No cooking or baking required.
Starting with chocolate cookie crust ,many layers of ice creams, chocolate fudge, chocolate syrup ..etc are added to create a delicious mud pie.

Too much of a favorites in one cake!!

Try this and surprise your guests.

Ingredients

30 to 40 count – Oreo chocolate cookies,
1/4 cup – unsalted butter,
6 cups(48oz) – Coffee ice cream,
11oz/320g – milk Chocolate chips,
14oz – Condensed milk,
Whipping cream,
Chocolate syrup,

Description

Layer – 1

Prepare the bottom crust.

Generously butter the 9 inch springform pan including sides.

place the butter paper to the bottom of the pan (optional).

Smash the oreo biscuits( around 30) into smooth powder by putting it in ziplock or crush it in blender,add melted butter and mix well.

Press the Oreo cookie crumbs evenly to the bottom of an greased springform pan.

Freeze it for about 30 minutes .

Layer -2

Soften 4 cups(32oz) of coffee flavored ice cream by keeping it out of freezer for about 10 to 15 minutes.

Take ice cream in a bowl and stir it to become batter consistency.

Now, spread evenly on prepared crust.

Cover it with cling wrap and Freeze for 2 hours.

Layer – 3

Prepare chocolate fudge

In a microwaveable bowl, melt chocolate chips in a microwave for about 1 minute, stirring every 20 seconds or until smooth.

Let it cool for 30 seconds, add condensed milk and mix.
Microwave the mixture for 30 seconds.
Cool little bit and pour on freezed ice cream forming another layer.

Cover and freeze for another 30 minutes.

Layer -4

Decorate with some oreo cookie pieces or can arrange whole Oreo cookies to form another layer.

Freeze for 1 hour.

Layer -5

Take out the pan from freezer and
Spread 2 cups(16oz) of ice cream and swirl some chocolate syrup.

Freeze for 2 hours.

Layer -6

Take out the pan from freezer and top with

thawed whipping cream and sprinkle cookie crumbs,walnuts , chocolate syrup and strawberries.

Freeze for 4 hours or overnight.

Yummy mud pie is ready!!
Serve immediately and store remaining pie in freezer.

Notes-

– Oreo cookie crust will stick to pan if not greased properly. Use butter paper(optional)

– chocolate fudge will thicken soon.so spread when it is pouring consistency.

– Can choose other flavor ice cream like chocolate and vanilla but coffee goes best.

– You can use any topping of your choice.

– Can mix fruits ,nuts or chocolate chunks to ice-cream.

Paddu/ponganalu /paniyaram


Paddu is a South Indian dish made by steaming batter in a mould.It is an breakfast item and evening snack or can give to kids as lunch.

Ingredients

2 cups – Dosa batter
1 medium – Carrot
1/2 – Onion
1/4 cup – Cilantro
2 – Green chillies
Salt(if required)

Paddu pan – non- stick or cast iron


Description

Add grated carrots, finely chopped onion, cilantro and green chilies to the dosa batter.
add salt or skip if you had already added to dosa batter.
Mix well.

Heat non- stick (or cast iron )paddu pan at medium – low flame.
Put oil in all the pits of paddu pan and pour batter in all the pits.
Close the lid and cook for 7 to 8 minutes .

Now remove the lid and drizzle few drops of oil on top and flip the paddu’s. cook the other side for 4 to 5 minutes or until done.

Serve hot with coconut chutney or ketchup.

Notes

– Paddu pan can be found online in Amazon, flipkart . Many Indian stores in USA has paddu pan.
– Flavor can be enhanced by adding cumin seeds and curry leaves.

Badam Puri


Badam puri is sweet dish from Karnataka. Made specially during festivals and stacked in big jar.
Fried and dipped in sugar syrup. Crispy and sweet.Requires very less ingredients . Try this yummy sweet.

Ingredients

Badam/almonds – 1/2 cup(18 to 20 count)
Maida – 2 cups
Milk – 3/4 cup(approx)
Ghee/clarified butter -1/4 cup

Sugar syrup

1 cup – sugar,
3/4 cup – water,
1 teaspoon – cardamom powder

Coconut flakes to garnish,
Few cloves


Description

Soak almonds for 1 hour and remove the skin of almonds. Grind it to make smooth paste.
In a medium sized bowl,take 2 cups of maida, add almond paste, ghee and by adding milk gradually make a soft dough.

Let dough rest for 10 min, meanwhile you can make sugar syrup.

To make sugar syrup ,in a thick bottomed pan add sugar, water,cardamom powder and bring it to boil. Boil it for 15 to 20 minutes.

Now, knead the dough and make equal sized balls out of it.
Using roller pin roll the each dough ball into round shape and apply some ghee and fold it to half , apply ghee and again fold to make triangle shape .
Slightly roll the dough.

Repeat and make 4 to 5 triangle shape dough.

Heat oil in a pan , at medium -high heat.
Test oil by dropping little bit of dough, it should puff up instantly then your oil is ready to fry.

Deep fry badam puri’s both the sides until golden brown and soak both sides in sugar syrup for 8 to 10 min.

Garnish with coconut flakes.

Above recipe yields 20 to 25 badam puri’s.

Note

– If required, add more milk to make dough.

– Use clove to lock the badam puri’s so it will not open up while frying.

– Sugar syrup should be warm or little hot for soaking.

– Tastes Better if consumed within 3 days.can be refrigerated but loses its actual taste if kept more than 3 to 4 days.

Ellu Bella Mixture(Sankranti special)

Makara sankranthi is celebrated as a very important festival in India. Many states in India celebrate this festival in their own way. farmers celebrate it ,as harvest will be complete and will prepare sweet out of it.
In Karnataka, usually celebrated by distributing Ellu Bella mixture and kite flying in daytime.
Ellu Bella mixture is good for health in winter.
Try this tasty mix and share with your family and friends.

Ingredients

1 cup – Jaggery,
1 cup – dry coconut,
1 cup – peanuts,
1 cup – Chana dalia split,
1 cup – sesame seeds
1 cup – sugar fennel seeds,

Description

Cut jaggery into very small cubes using knife or Nut cracker.
Remove the outer skin of coconut by grating it and cut into small cubes.

Sun dry both dry coconut and jaggery pieces.

Dry roast the peanuts and dry roast sesame seeds until it puffs up.

Mix jaggery, dry coconut, peanuts, sesame seeds, sugar fennel seeds and dalia split.

Ellu Bella is ready to eat and share.

Notes

– can increase the quantity of jaggery to two cups and reduce the sesame seeds to half cup.
– I have used blanched peanuts. If you are using skinned peanuts then remove the skin of peanuts after roasting.
– can be stored in air tight containers
Or zip locks for 2 weeks at room temperature .

Carrot cupcakes 


Carrot cupcakes has carrots in its batter. Carrot softens the cake and as a result we have a soft and dense cake. Goes very well with walnuts and cream cheese frosting.Favorite of many. Try this easy recipe to make carrot cupcakes.

Ingredients

1 cup(128 gms) – all purpose flour,
1 cup(201 gms) – granulated sugar,
1 teaspoon – cinnamon,
1 teaspoon -baking Soda,
1/2 teaspoon -baking powder,
1 teaspoon – vanilla extract,
2 eggs( beaten) ,at room temperature,
3/4 cup(5.5 oz) – vegetable oil,
1/2 cup – walnuts,
1 cup – finely grated carrots (approx 2 carrots)

Cream cheese frosting 

1 /4 cup(57 grams) – Unsalted butter, at room temperature
113 grams/4 oz – Cream cheese
1 cup(225 grams) – powdered sugar,
1 teaspoon – vanilla extract


Description
Preheat your oven at 350 Fahrenheit/175 Celsius and line 12 cupcake Pan with paper liners.
Beat 2 eggs.In a medium sized bowl,mix flour,sugar,baking powder, baking Soda,cinnamon powder.

add beaten eggs ,vegetable oil and vanilla. Now ,with hand mixer or electric mixer beat everything into a smooth batter.

Fold grated carrots and walnuts to the batter and mix to incorporate.

Using spoon or ice cream scoop fill 3/4 Th of cups with batter and bake for 20 to 25 min or until toothpick inserted to middle of the cake comes out clean.

allow to cool completely before frosting.

Cream cheese frosting

In a hand mixer or electric mixer,cream together butter , cream cheese. Add sugar ,vanilla and beat until fluffy and forms stiff peaks.

Using piping bag/Ziploc frost cupcakes .

Avocado Paratha


Avocado is used in many recipes like guacamole dip, salad , wraps and brownie too..Avocado Paratha is Indian style of using Avocado.

Every serving of Avocado has 20 vitamins and minerals including potassium,vitamin B,C,E plus natural chemicals that may help prevent cancer.

Avocados are low in sugar, rich in fiber which keeps you full for longer.

Avocados have good fat which helps in lower bad cholesterol as long as you have them in moderation.

It has many benefits do not forget to include in your diet.

Ingredients

3 – large Avocados,
2 – cloves of garlic,
2 – green chilies,
1/4 cup – Cilantro /coriander leaves(chopped nicely),
1 teaspoon – salt,
1 – lemon juice,
2 cups – whole wheat flour


Description

In a medium sized bowl, peel the skin of avocados , remove seed and smash Avocados into smooth paste.

Now , add garlic paste,chopped green chilies , cilantro, salt , squeeze lemon juice and mix well.

Gradually add wheat flour to avocado mixture and knead to form smooth chapati kind of dough.

Drizzle some oil and knead the dough and let it rest for 5 to 10 minutes.

Make equal size balls from dough and take one ball, flatten it , dust flour and roll into thin round shape paratha using rolling pin.

Heat a non – stick tawa or skillet on medium heat, place the paratha and cook.. drizzle some oil on top. Flip and by pressing with spatula cook the other side.
Enjoy Paratha with chutney /pickle/ghee/curd.

Notes

I have used almost 2 cups of wheat flour . You can use more or less depending on your dough.

I have not used water.You can use few drops if required while making dough.

Easy way to feed avocados to kids is smash half avocado with spoon and add 1 teaspoon of sugar and mix well.kids love it

Jowar flour Dosa 


Jowar flour is a healthy millet which has high source of calcium, iron , Vitamin B and dietary fiber. Jowar is very filling and keeps you active.If your looking for gluten free recipes you can replace your flour with jowar flour.

Jowar Dosa is a simple to do recipe and very tasty.

Ingredients

1 cup – jowar flour,
2 Tablespoons – rice flour,
2 – green chilies,
2 Tablespoons – coconut powder ,
Few cilantro /coriander leaves,
1 teaspoon – Salt,
1 1/2 cups – water


Description

In a medium sized bowl, put jowar flour,rice flour,green chilies, coconut,cilantro and salt(according to your taste).

Add water and make batter consistency.Keep aside for 10 to 15 minutes.

Heat the non- stick pan and pour the dosa batter in circular way, put some oil on top.Now flip and cook the other side.

tasty and healthy jowar dosa is ready. Enjoy with red chutney powder or pickle.

Notes

No need to ferment the batter as in other dosa recipes.can be used right away.
Be patient,Cooking time is longer.

Dates walnut chocolate cake(eggless)


If you are looking for sweet , moist eggless cake. Try this dates walnut chocolate cake(eggless).

Ingredients

1 cup – all purpose flour,
1/4 cup – cocoa powder,
1/4 teaspoon – nutmeg powder,(optional)
1 1/2 tablespoons – baking Soda,
1 tablespoon – baking powder ,
15 – medjool dates,(deseeded)
1/4 cup – walnuts,
1/2 cup – unsalted butter,at room temperature
14oz – condensed milk,
1/2 cup – warm water,

For garnishing 

Chocolate syrup,
Walnut/almond/cashew crushed pieces


Description

Preheat your oven at 350 degree Fahrenheit’s.Grease a 8 inch round baking pan with butter.

Soak the medjool dates(deseeded) in 1/2 cup warm water for 10 minutes and then grind it with water to make smooth paste.

In a medium sized bowl,Mix all dry ingredients like flour, cocoa powder,baking powder, baking Soda ,nutmeg powder(optional).
add cubes of butter to it and mix well.

Now, add dates paste and condensed milk,stir and fold some walnuts.

Pour the prepared batter to greased pan and

bake for 40 to 45 min or until toothpick inserted to middle of the cake comes out clean.

Cool it and garnish with chocolate syrup and crushed walnuts.

Enjoy!!

Notes

Medjool Dates are super soft and sweet which keeps your cake moist. Any dates can be used but soaking time of dates depends on the type of dates you are using.

Pitted dates should be soaked for 25 to 30 min.

Dry dates should be soaked in hot water for an hour.

can use wheat flour instead of all purpose flour.

Cookie is a American sweet which is round, flat and crispy.Cookie is made up of flour, white and brown sugar, butter, egg, baking powder.

Chocolate chip cookie is a cookie which has a distinguish ingredient chocolate chip.

1 1/4 – all purpose flour,

1/2 – granulated sugar,

1/4 – brown sugar,

1 tsp – baking powder,

1/4 tsp – baking Soda,

1 cup – chocolate chips,

1/2 cup – unsalted butter,at room temperature

1 egg, at room temperature

1/2 tsp – vanilla,

2 tablespoons- water


Description

Preheat your oven at 375 degree Fahrenheits.Place a parchment paper on baking tray.

In a medium sized bowl, using electric or hand mixer beat butter until smooth and fluffy, add granulated sugar and brown sugar ,beat well.add vanilla essence to it.

In a separate bowl, mix all dry ingredients flour, baking powder and baking soda.

Mix dry ingredients to butter mixture and beat slightly to incorporate, add chocolate chips and mix.

In a spoon or ice cream scoop drop cookie mixture to baking sheets and bake for 6 to 8 min or until it’s brown at the edges.

Add flour,cocoa powder,baking powder, baking Soda ,salt and mix everything into a smooth batter.

Using spoon or ice cream scoop fill evenly mini cups with batter and bake for 15 min to 18 min or until toothpick inserted to middle of the cake comes out clean.
